Grilled Pineapple Chicken
This chicken and pineapple recipe screams summer to me! It’s so fresh and flavorful. The thing I love about it is that you don’t have to heat up your house!
Turn on the grill, throw the marinated chicken down on some foil, and set it and forget it!
We like to serve this Grilled Pineapple Chicken over rice with a side of steamed broccoli! YUMMY!!

GRILLING CHICKEN
There are a million ways to grill chicken, I know! But, regardless of your method there is one key item you HAVE TO HAVE in order to grill right and that is an instant read thermometer.
Chicken needs to cook until its internal temperature reaches 165 degrees.
Anything cooler than that and you run the risk of undercooked raw chicken. Anything hotter than that and you run the risk of overcooking, dry chicken.
GRILLED PINEAPPLE
In this recipe, the pineapple is used during the marinade, the grilling, and for serving! It adds such a delicious flavor element to the meal! This pineapple chicken marinade makes this chicken so good!
You can use fresh, frozen, or canned pineapple for this recipe! Whatever you prefer or have on hand works for me!
The pineapple will cook on the chicken in the grill, giving it a nice caramelized flavor and texture!

With any marinade, the longer you let it marinate, the more flavorful and tender the chicken will be.
Ideally, you want to let this marinate for 1 hour.
But if you are in a hurry, you can let it marinate for 15 minutes.
If you plan ahead, go ahead and let it marinate all day until you’re ready for it!

Pineapple Grilled Chicken
This easy Pineapple Grilled Chicken is the perfect summertime meal! Made with juicy chicken breasts, teriyaki sauce, and fresh pineapple!
Ingredients
- 1 pound chicken breasts, thawed
- 1 cup teriyaki sauce
- 2 cups diced pineapple
- Salt & Pepper to taste
- Additional teriyaki sauce for serving
Instructions
- Place the chicken, teriyaki sauce, and pineapple in a gallon sized zip lock baggie. Marinate in the fridge for 1 hour.
- Preheat the grill to 300.
- Prepare a large piece of tin foil by folding up the edges to create a barrier for the sauce.
- After the chicken has marinated, place the foil down on the grill. Pour the bag of chicken and marinade out onto the foil and spread the chicken out to a nice, even layer. Season with salt and pepper.
- Close the lid and set a timer for 25 minutes. When the timer sounds, check the internal temperature of the chicken. Cook for an additional 5 or so minutes until the temp reads 165.
- Once the chicken is cooked, remove it from the grill and shred. Stir in additional teriyaki sauce if needed and serve with rice and a veggie.
- Enjoy!
Notes
I place my cooked chicken breasts in my kitchen aid on a low speed with the paddle attachment for easy shredding!
