Healthy Rice Krispies
I’m putting (healthier) in parenthesis because these squares are made with lighter, more natural ingredients but they don’t sacrifice flavor! Rather than using marshmallows, butter, and corn syrup; I used almond butter and honey! If I didn’t tell you, you wouldn’t even know that these are a healthy treat! They taste simply delicious! But don’t just take my word for it, make them with me!

The holiday season is filled with delicious cookies, candies, and sweets! I wanted to create a healthy treat that would taste amazing and embrace those holiday flavors! Thus, these healthy Gingerbread Rice Krispie Treats were born!
Everyone who has tried these so far, have loved them! I get the same response each time, “these are really healthy?” My answer is that they are a healthier treat for the holidays! All things are good in moderation! I chose to make these using almond butter, honey, molasses, and brown rice cereal.
The Secret Ingredient
The secret ingredient in these Gingerbread Rice Krispies is in the almond butter I use! I didn’t use plain almond butter, I chose to use OffBeat Cinnamon Bun Butter!

Gingerbread Rice Krispie Treats
A healthier spin on the classic Rice Krispie treat, with the addition of warm spices, nut butter, and molasses! These Gingerbread Rice Krispie Treats are a chewy, no bake, easy recipe to make that everyone will enjoy!
Ingredients
- 4 cups rice krispie cereal
- 1 cup Cinnamon Bun Almond Butter* see notes
- 1/2 cup honey
- 3 tbsp molasses
- 1 tsp vanilla
- 1 tsp ginger
- 1/2 tsp allspice
- 1/2 tsp nutmeg
- 1/2 tsp cloves
- Optional: melted white chocolate for drizzling
Instructions
- Line and grease a 9×9 pan with parchment paper.
- To prepare, in a large mixing bowl, add 4 cups of rice krispie cereal.
- In a small pot on the stove, add the Cinnamon Bun butter, honey, and molasses, and stir till well combined. While stirring, bring the mixture to a low simmer and then immediately take off the heat and stir the vanilla and ginger, allspice, nutmeg, cloves.
- Pour the wet ingredients over the rice krispie cereal and stir together well, until all of the cereal is well coated with the mixture.
- Pour the gingerbread rice krispies into a pan and spread them evenly across your pan, so the top is smooth and as flat as possible. Press the rice krispies into the pan. Drizzle with white chocolate if desired.
- Cover and place the gingerbread rice krispie treats into the fridge and let them cool for at least an hour. Remove from your fridge and cut into 9 bars.
Notes
*For this recipe, I used Offbeat Cinnamon Bun Butter. You can shop this nut butter online or find it at select Harmon's Grocery Stores.
*You can use regular almond butter for this recipe. Use one cup almond butter and add an additional teaspoon of cinnamon.
