These Healthy Blueberry Banana Oat Muffins are the perfect treat! Delicious, flavorful, and packed with healthy ingredients! Healthy Blueberry Banana Oat Muffins
Yields 12 muffins
2 large eggs
1/2 cup plain low fat Greek yogurt
2-3 ripe bananas, mashed
1/2 cup sugar in the raw
1 teaspoon vanilla
1 teaspoon baking soda
3/4 cup old fashion oats
1 cup + 2 tablespoons whole wheat flour or Kodiak Cake Mix
1 cup blueberries, fresh or frozen
Optional: 1 scoop vanilla protein powder
Preheat oven to 350. Prepare cupcake tin by spraying and lining with cupcake liners
In a mixing bowl, combine eggs, greek yogurt, and bananas.
Add in sugar, vanilla, and baking soda and mix until smooth.
Next, add in the oats, flour, and optional protein powder.
Finally, fold in the blueberries.
Divide the batter evenly among the 12 muffin cups. Add an additional sprinkle of sugar on top if desired.
Bake for 20-22 minutes, or until the tops of the muffins begin to turn golden and a toothpick comes out clean. Allow muffins to cool completely. Store in an air tight container for up to 5 days, or freeze for up to 3 months.
