These muffins are made with whole wheat flour, mashed bananas, cinnamon, and poppy seeds. Plus, you can add additional protein powder to give it an extra boost! Make it with me!

These muffins are healthy and delicious! Plus, they are super easy to make. All the ingredients in this recipe are made with nutritional ingredients that make the muffins super flavorful and extra yummy!
Healthy Ingredients
For this recipe, I used whole wheat flour. You can use any flour alternative that you have on hand! Coconut flour, almond flour, or even regular all purpose flour will do. Same goes for the coconut sugar. You can also substitute splenda, honey, or sugar in the raw.
Sweeten with Bananas
Adding bananas to this recipe give the muffins extra moisture! The banana flavor is not super strong.
Healthy Poppy Seed Muffins
Yields 12 muffins
2 eggs, large
1/2 cup maple syrup
3/4 cup almond milk, unsweetened
3 tablespoons coconut oil, melted
1 teaspoon vanilla extract
2 bananas, mashed
1.5 cups white whole wheat flour
½ cup coconut sugar or sugar alternative
1 tablespoon cinnamon
1 teaspoon baking soda
1/8 teaspoon salt
1 scoop protein powder (optional)
2 tablespoons poppy seeds
First, preheat oven to 350ºF and prepare muffin tin.
To the stand mixer, add the eggs, maple syrup, almond milk, coconut oil, and vanilla. Mix well.
Mash two bananas and add to the wet ingredients.
Next, add the whole wheat flour, coconut sugar, cinnamon, baking soda, salt, and optional protein powder into the mixing bowl.
Fold in the poppy seeds.
Fill each muffin about 3/4 of the way full. Bake for 15-20 minutes or until the center is fully cooked.
Let cool for 5 minutes and then remove from the muffin tin to continue cooling.
