Pumpkin
I really do love pumpkin! It has a great flavor, a bold orange color, and it can be used in a wide variety of recipes. From breads, to cookies and cakes, and everything in between. These Healthy Pumpkin Muffins are a real treat!
This recipe calls for canned pumpkin. You can use any canned pumpkin brand that you prefer!

Maple Crumble Topping
What really makes this recipe over the top delicious, is the maple crumble I added to the top of each muffin!
The crumble is simple, old fashion oats, chopped pecans, and maple syrup! Each bite with the crumble in it is a real treat! So yummy!

kodiak cakes mix
cornstarch
pumpkin pie spice
baking powder
salt
eggs
pumpkin
honey
vanilla
old fashioned oats
chopped pecans
maple syrup

Healthy Pumpkin Muffins

Healthy, Macro Friendly Pumpkin Muffins with the most delicious maple crumble topping!
Ingredients
- 1 cup kodiak cakes mix
- 2 tablespoons cornstarch
- 1 tablespoon pumpkin pie spice
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 eggs
- 1 15 ounce can pumpkin
- 1/2 cup honey
- 1 teaspoon vanilla
- 3 tablespoons old fashioned oats
- 3 tablespoons chopped pecans
- 1 tablespoon maple syrup
Instructions
- Preheat oven to 350.
- To a stand mixer, combine kodiak cakes mix, cornstarch, pumpkin pie spice, baking powder, and salt.
- In a separate bowl, whisk together eggs, pumpkin, honey, and vanilla.
- Slowly add the wet ingredients to the dry, mixing on a low speed, just until combine.
- Place the cupcake liners in the cupcake tin, and fill to the brim with batter.
- In a small bowl, whisk together oats, pecans, and maple syrup.
- Top each muffin with a little bit of the topping.
- Bake for 20 minutes.
- Cool and store in an air tight container for up to a week.
