Today I am sharing my recipe for chicken salad sandwiches, and it is one you will want to make again and again! It really is the best chicken salad! I have a few tips to make it tasty, and delicious! What Chicken Should You Use?
To make the best chicken salad recipes, you need to use fresh chicken. The most important part of a good chicken salad is the chicken. You want to use either cooked chicken breasts or rotisserie chicken.
I have nothing against canned chicken, truly. It’s easy and I don’t mind the flavor. However, if you want to make a really yummy chicken salad that will feed a crowd, fresh is the way to go.
If I don’t want to bake up the chicken on my own, I like to use the Costco rotisserie chicken breasts.

What Else Goes Into Chicken Salad?
My chicken salad recipe calls for the following:
- celery
- red grapes
- toasted sliced almonds
- minced parsley
- homemade dressing
The dressing really brings it all together.
I like to toast my almonds before adding them to the mix because it adds another element and layer of flavor! I simply spread them out on a baking sheet, and broil them for a few minutes. Watch them closely because they brown up fast.

Traditional Chicken Salad Recipes
A traditional chicken salad recipe has chicken, grapes, celery, and almonds. Many are served on a croissant too.
Where my recipe differs is in the dressing. The sauce that coats it all before you chill it and serve.
I like to add whipped whipping cream to the dressing to make it light, airy, and even a little bit fluffy.
Here’s the thing, I don’t sweeten my whipping cream. I simply whip it up with beaters, add the whipped cream to the other ingredients and fold it in gently. Try it!

Homemade Chicken Salad

The best homemade chicken salad recipe to make chicken salad sandwiches. Perfect for a crowd!
Ingredients
- 2 1/2 cups chicken, cooked and diced
- 1 cup celery, chopped fine
- 1 cup red grapes
- 1/2 cup slivered toasted almonds
- 2 Tablespoons minced parsley
- 1 teaspoon salt
- 1 cup mayonnaise
- 1/2 cup whipping cream, whipped
Instructions
- Combine all the ingredients together and chill until ready to serve.
- Serve on your favorite bread and enjoy!

*This recipe is easy to double to feed a crowd! You can also triple it too!
