This homemade gingerbread loaf is always a holiday favorite! We love it for many reasons!
Mainly, while this loaf bakes in your oven, your house will smell like gingerbread! Or really I should say your house will smell like Christmas cheer!
We also love it because it’s a quick bread, so it doesn’t have to rise. You can make a loaf in just over an hour.
This is a no-fail recipe. It will turn out every single time!
What Do I Need to Make This Recipe?
To make this loaf you will need the following:
butter
brown sugar
molasses
vanilla
eggs
hot water
flour
baking soda
ground cinnamon
ground cloves
ginger
salt
What Should I Top My Gingerbread Loaf With?
This recipe makes a deliciously moist bread! You can enjoy it for breakfast, as a snack, or even as a dessert.
My favorite topping is to simply dust it with a little powdered sugar! I think it looks so pretty and it’s easy.
If you want to take this recipe up a notch, you can top it with a homemade icing. Simply whisk together powdered sugar and milk until its pourable then drizzle it over the top of the loaf.
You could also just leave it plain! The loaf is so flavorful it doesn’t need anything additional. I do like to butter each slice with room temperature butter just before serving.

This Homemade Gingerbread Loaf is the perfect holiday quick bread! Soft, moist, and perfectly spiced!
Ingredients
- ½ cup unsalted butter
- ½ cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup molasses
- ½ cup boiling water
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 2 teaspoons ground ginger
- 2 teaspoons ground cinnamon
- ½ teaspoon ground cloves
- ½ teaspoon salt
Instructions
- Preheat oven to 350 degrees. Grease a 9x5 loaf pan generously and set aside.
- In a large bowl, cream together butter and sugar. Add eggs, vanilla, molasses, and hot water. Stir until well combined.
- In a separate bowl, whisk together the dry ingredients: flour, baking soda, ginger, cinnamon, cloves, and salt. Add the dry ingredients to the wet ingredients. Stir until just combined.
- Pour batter into loaf pan. Cover loaf pan lightly with foil (remove foil halfway through baking). Bake for 50-60 minutes, or until a toothpick comes out clean. Allow the bread to cool in the pan for 10 minutes before removing it.
- Optional, finish with a dusting of powdered sugar.
