Homemade spring rolls are healthy, fresh, and flavorful! Making spring rolls at home is simple and I love how they turn out so colorful plus, they taste amazing! All you need to do is prep and julienne all of your vegetables into long, thin slices. Then, assemble all of your ingredients together, including the veggies, shrimp, rice noodles, herbs, and rice paper wrappers. Roll them up tightly in the rice paper wrappers and enjoy! What’s In A Spring Roll?
This fresh spring roll recipe is so delicious! You may be asking, what’s in a spring roll? Let me break it down:
- Rice Paper Wrappers- you can buy these in the asian foods section at a lot of local grocery stores. I usually buy them at Winco in the front of the store, in the refrigerated section near the tofu.
- Rice Noodles- any rice noodles will work for this recipe! Simple cooked them up according to the package directions, then run them under some cold water when you drain them and add them to your rolls.
- Fresh Herbs- adding fresh herbs like cilantro and mint to spring rolls give them such a delicious flavor!
- Cucumbers- I love to julienne cucumbers for my spring rolls.
- Carrots- I like to use the large carrots, and peel and julienne them myself.
- Red & Yellow Bell Peppers- Colorful bell peppers add lots of color to your rolls!
- Butter Lettuce- I like using butter lettuce in my spring rolls because I like the flavor it brings and the leaves fit and roll nicely.
Spring Roll Peanut Sauce Recipe
I love a good peanut sauce to dip the spring rolls in! Peanut sauce is actually really easy to whip up at home and it only requires 4 ingredients!
- Peanut Butter- creamy or crunchy works!
- Sweet Chili Sauce- you’ll find this in the asian section of the grocery store.
- Soy Sauce- regular or low sodium. You can also use coconut aminos.
- Hoisin Sauce- again, in the asian section of the grocery store.
Then you just use a little bit of water to thin it down to your desired consistency. If you like it thicker, leave it thicker. You can also thin it until it is runny.
HOW TO MAKE FRESH SPRING ROLL RECIPE:
Making spring rolls at home is actually really quick and easy! I love making a few rolls for an easy lunch or for a colorful appetizer.
- Dip wrappers in water. Fill a large shallow dish or pie plate with an inch or so of cold water. Remove one rice paper wrapper from the package, and place it in the water to soak. Allow it to soak for about 10 to 15 seconds and then remove and place on a cutting board or countertop. The rice wrapper should still feel pretty firm at this point. It will soften as it sits and as you add the filling ingredients.
- Add filling. Layer everything on the 1/3 of the spring roll that is closest to you. Add 1-2 of each ingredient, and a small pinch of noodles.
- Wrap it up. Pick up the sides of the spring roll and fold them in over the toppings. Then pick up the edge closest to you and pull it up and snugly over the toppings. Continue rolling all the way up like a burrito. Practice will make perfect, but just try to keep all of the ingredients tightly together as you roll everything up.
Step by Step How to Roll Spring Rolls
Start by placing the rice paper wrapper in a dish with cold water for 15 seconds. Then, remove it and place it on a cutting board.
Place the softened rice paper wrapper on a cutting board and layer all the ingredients inside. Then, roll it up as directed in the pictures below and enjoy!

Ingredients
- 1 package spring roll rice wrappers
- 1 package rice noodles, cooked
- 1 large carrot, peeled and julienne
- 1 large cucumber, peeled and julienne
- 1 red bell pepper, julienne
- 1 yellow bell pepper, julienne
- 1 pound cocktail shrimp
- 1 head butter lettuce
- 1 bunch fresh mint leaves
- 1 bunch fresh cilantro
For the Peanut Sauce
- 1/3 cup peanut butter
- 1/3 cup sweet chili sauce
- 1 teaspoon soy sauce
- 1 teaspoon hoisin sauce
- Water to thin to desired consistency
Instructions
- Prep all the filling by julienning the veggies, removing the stems of the herbs, and cooking the rice noodles as directed on the package.
- Add about 1 inch of cold water to a large, deep dish, or pie pan. Place one rice wrapper into the water and let soak for just 10-15 seconds. It should still feel pretty firm as you remove it and lay it on your counter or plate. (It will soften up as you add the filling ingredients, but If you let it soak for too long it will get too soft and will tear when you roll it up.)
- Layer 1-2 slices of each veggie, a few shrimp, a few leaves of each herb, and a pinch of noodles on the 1/3 of the spring roll that is closest to you.
- Fold the sides of the spring roll in over the ingredients. Then pull the side closest to you up and over the ingredients, sealing everything together tightly, and rolling it up like a burrito.
For the Peanut Sauce
- Whisk all the ingredients together in a small bowl.
- Add a little bit of water to thin to your desired consistency. Enjoy!
