Artichokes
Did you know artichokes are in season in the spring? Starting in March and going through May, now is the best time to eat them!
Growing up, I always loved artichokes! We didn’t have them very often and I think that is why I love them so much!
You know how it is, the less you have something, the more you crave it!
I recently started cooking my artichokes in instant pot and I love the results! I love how the electric pressure cooker makes it a hands-off recipe instead of boiling water on the stovetop.
How to cook artichokes in the Instant Pot
- Trim the top to remove sharp thorns and the bottom stem.
- Add water to the Instant Pot.
- Add trivet insert and then artichokes to the pot.
- Cover and cook on high pressure for 20-30 minutes depending on the size of the artichokes.
- Quick-release the pressure.
- Remove and allow to cool slightly before serving.
Similar to boiling artichokes, when it’s easy to remove the leaves with a gentle pull then it’s done cooking.
How to Eat the Artichoke
Eating an artichoke is obviously the best part! You pull the leaves out one by one and eat the meaty part at the base of the leaf. I like to dip them in melted butter!
The best part, in my opinion, is that once all of the petals are removed, a meaty and tender heart is revealed at the core. Make sure not to throw this part away, or you’ll be missing out!
I like to use the core to make my homemade spinach and artichoke dip! It’s a good one!

Instant Pot Artichokes
Cooking instant pot artichokes couldn’t be easier. This simple and quick recipe is my favorite way to cook these!
Ingredients
- 2-4 artichokes
- 1 cup water
- 2 Tablespoons butter
Instructions
- Submerge artichokes in cold water for 5 minutes.
- Prep the artichokes by cutting off the stem and trimming the top one-inch tip of the vegetable.
- Place artichokes in the Instant Pot on the trivet or in a steamer basket with one cup of water.
- Lock the lid, set the valve to seal, and manually set the pressure for 25 minutes*.
- When the cooking cycle is finished, do a Quick Release of the steam/pressure by turning the steam release knob to the Venting position, or pushing the release button, if applicable (If you like softer artichokes, let the pot naturally release the pressure).
- You can tell when the artichoke is done when a knife slides into the bottom easily.
- Serve with melted butter for dipping and enjoy!
Notes
*Cook times will vary based on the size of the artichokes, as well as the density of the leaves. Tightly packed, the denser quantity of leaves (and a heavier artichoke) will take longer to cook. You may need to do a test to find your perfect cook time.
