Whenever I go to Costco or Sam’s Club, I almost always leave with a $5 rotisserie chicken. I love that it is an easy protein source, plus they are delicious!
But, I used to just throw away the carcass once all the meat was gone. Well, not anymore!
I realized that you could use the carcass to create a delicious bone broth in the instant pot in an hour or so, and it makes a lot of broth too!

Instant Pot Bone Broth
Ingredients
- Bones from one rotisserie chicken
- 8 cups water
- 2 bay leaves
- 1 cup carrots
- 3-4 celery ribs
- 1/2 cup green or white onions
- fresh herbs and additional seasonings
Instructions
- Place bones, vegetables, and herbs into the pot of the Instant Pot.
- Add enough water to just cover the bones and vegetables in the pot, about 3/4 full.
- Place lid on Instant Pot and lock into place. Flip vent valve to ‘Sealing’.
- Select ‘Manual’ or High-Pressure setting and adjust the cooking time to 30 minutes.
- When cooking is done, allow pressure to release naturally completely. Wait for the pin to drop.
- Allow broth to cool before straining the broth through a mesh-lined strainer into jars for storage. Add salt to taste.
- Store in the fridge for up to two weeks.
