This recipe is super quick and easy to follow! You will need to use the Pot in Pot method to cook this cobbler. This means you will need an oven safe dish that will fit inside of your Instant Pot! We will add the ingredients to the inner pot, and place it in the Instant Pot on the trivet (that comes with the pot when you buy it) with a cup of water. Similar to the water bath technique in the oven, this will allow steam to create the pressure and cook the cobbler. We put tin foil over the dish to avoid any drops of water getting in the cobbler.

Ingredients
- 1/2 box white cake mix
- 2 cups fresh or canned peaches
- 1/4 cup butter, melted
- 1 teaspoon ground cinnamon
- 1 cup water
- *Vanilla ice cream optional
Instructions
- In a mixing bowl, add cake mix and cinnamon. Mix.
- Pour in melted butter and stir to mix well. The mixture will be stiff and hard to mix.
- Add peaches to an oven safe dish that will fit inside your Instant Pot. If using fresh peaches, stir in a couple tablespoons of granulated sugar.
- Sprinkle cake mix onto the peaches.
- Cover the cobbler with tin foil and set it in the Instant Pot on the trivet. Add 1 cup water to the bottom of the pot. Lock the lid, set the valve to seal and manually set the pressure for 20 minutes.
- When the cooking time is up, allow the Instant Pot to naturally release on low pressure for 5 minutes. Quick release the remaining pressure and carefully remove the cobbler.
- *Optional Step: If you are wanting a brown, crisp crust, place the finished cobbler in your oven on broil for 1-2 minutes, just until browned.
- Spoon onto plates and serve with a scoop of vanilla ice cream.
