Jalapeño Fried Corn
My mom actually taught me how to make this Jalapeño Fried Corn years ago and it’s remained a family favorite side dish ever since!
The combination of the sweet corn, the spicy Jalapeño, and the garlic butter sauce makes this a real treat!
We love to throw it on our plates as a side dish to any meal! But you could also use it is as a taco or salad filling. I even use it in my BBQ Pork Buddha Bowl recipe!
Jalapeño
I like to remove the seeds from my jalapeño before adding it to the frying pan. I like a little bit of heat, but not much!
That choice is up to you! I love how the sweet corn compliments the hot jalapeño!
Garlic Butter
This recipe calls for my very favorite Chef Shamy Garlic Butter. This stuff seriously elevates your cooking and makes everything taste amazing!!

Jalapeño Fried Corn
My favorite way to use up leftover corn!
Ingredients
- 3-4 Corn on the Cob, kernels removed OR 3 cups frozen corn
- 2 jalapeño's, seeded and diced
- 1/2 cup white onion, diced
- 1/2 cup red bell pepper, diced
- 2 tablespoons garlic butter
- salt & pepper to taste
Instructions
- Heat up a frying pan over medium high heat.
- Sautè the jalapeño, onion, and bell pepper in the garlic butter for 2 minutes or until the onions are softened.
- Once the veggies are soft, add in the corn removed from the cob. Heat for one minute.
- Season with salt & pepper and enjoy!
