What Is Lasagna Soup?
Lasagna Soup is a deconstructed lasagna made into soup form!
This hearty and delicious lasagna soup gives you all the flavor of lasagna with the ease of a soup. You still get all the cheesy goodness, tender noodles, and hearty meat sauce you love.
Also, it’s made in one pot on your stovetop for easy prep and clean-up!

What You Need to Make This Recipe
- 1 pound lean ground beef
- 1 yellow onion, diced
- 4-5 garlic cloves, minced
- 24 oz. jar favorite marinara sauce
- 4-6 cups chicken broth, divided
- 14 oz. can crushed tomatoes
- 2 Tablespoons tomato paste
- 1 1/2 teaspoons granulated sugar
- One Tablespoon of Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 whole bay leaf
- 10 uncooked lasagna noodles broken into approx. 1-2 inch pieces
- shredded mozzarella cheese
- freshly finely grated Parmesan cheese
- ricotta cheese
- fresh basil

How to Make Lasagna Soup on the Stove
- Heat a large Dutch oven or large soup pot over medium-high heat. Add the beef and onion and cook, stirring occasionally, until the beef is browned. Add the garlic and saute for 30 seconds. Drain off any excess fat.
- Add pasta sauce, four cups of chicken broth, crushed tomatoes, tomato paste, sugar, spices, bay leaf, and lasagna noodles.
- Bring to a boil, then reduce to a simmer until lasagna noodles are tender, stirring occasionally for about 20 minutes.
- Discard bay leaf and stir in 2 more cups of chicken broth to reach the desired consistency.
- Garnish individual servings with a heaping scoop of ricotta, a generous shake of mozzarella, and freshly grated parmesan cheese. Add basil if you have it, and enjoy!
