Lemon Protein Bites
This recipe is light, freshing, and lemony! It’s made with old fashioned oats, lemon zest, shredded coconut flakes, and coconut butter!
I saw this Coconut Almond Butter at Sprouts and I just knew I wanted to use it as a base in my next protein bite recipe. It’s delicious!
You can also use the Offbeat Foods Lemon Coconut Bliss Butter!
Or can substitute it for regular almond butter and lemon extract and it’ll still be divine!
What are protein bites?
These protein bites save me on busy weeks! They are sweet, chewy, and totally irresistible. Plus, they are low calorie, high protein, so there is nothing to feel guilty about!
How to Make Protein Bites
2 cups old fashioned oats
1 cup Coconut Almond Butter or Lemon Coconut Bliss Butter or Almond Butter
1/2 cup honey
1/4 cup shredded coconut
1 scoop vanilla protein powder
2 tablespoons lemon zest, about one lemon
2 teaspoons lemon juice or lemon extract
1 teaspoon vanilla
1/4 teaspoon salt
Add all the ingredients to a stand mixer. Mix on a low speed until all the ingredients are incorporated.
Using a cookies scoop, scoop into balls and roll until smooth.
Store in a container in the fridge for up to two weeks.
