Casseroles are so easy to make for dinner. Am I a terrible person if I admit to making them about once a week? My family loves them.
I love how easy it is. I always buy my ground beef in bulk and cook it with chopped onions, and freeze it in gallon-sized ziplock bags.
Then, whenever a recipe calls for ground beef, like in this casserole, I have it ready to roll! It’s just a matter of incorporating the ingredients and baking it in the oven!
Can I double and freeze this recipe?
Yes, make it a double! My favorite thing to do when making a casserole for dinner is double up all ingredients and make 2 pans. Then, I bake one that night for dinner, wrap the other up in plastic wrap, and freeze it for a later date!

Loaded Mac & Cheese Casserole

Ingredients
- 1 pound elbow macaroni
- 1 pound ground beef
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 clove garlic, minced
- 1 medium sized white onion, diced
- 2 15 ounce cans Kroger diced tomatoes in tomato juice
- 1 16 ounce bottle marinara sauce
- 1 cup shredded mozzarella cheese
- 2 cups shredded cheddar cheese
Instructions
- Preheat oven to 350.
- Cook ground beef in a skillet over medium heat with the diced onion, garlic, salt & pepper. Cook until onions are soft and the meat is browned through. Set aside.
- Boil macaroni for 8 minutes, then drain. Set aside.
- Combine cooked meat, macaroni, diced tomatoes, and marinara sauce.
- Spoon into a greased 9x13 pan and top with the two cheeses.
- Cover with foil and bake for 25 minutes.
- Enjoy!

First time trying these recipes. Not an extremely experienced cooker. The dish tasted good. Like a goulash in a casserole form. But the recipe needs more detail. I.e temperature to bake on (I guessed 350), size of marinara bottle to use (I have different sizes), would be nice to know the kind of onion used (different onions could change the taste of the dish drastically)… maybe even the brands or styles of foods used just to get an idea of what would taste best (i.e. was plain or seasoned diced tomatoes used etc). Other than the lack of detail, and having to guess on most of it, it turned out tasty and I look forward to trying the other recipes.

I have updated the recipe to have the oven temp (an oversight on my part) and have edited it to add more detail. With a simple recipe like this, it’s easy to modify ingredients that you already have on hand. However, I recognize the importance of seeing exactly what ingredients I used, and will continue to do that in the future.
