I’ve been obsessed with this style of sticky popcorn for years! My famous caramel popcorn recipe has a base similar to this one but with the addition of brown sugar.
The method of melting down butter and adding mini marshmallows is simple, but it adds the most delicious flavor to popcorn when coated.
You can make a batch of marshmallow popcorn plain or flavor it with brown sugar or funfetti cake mix!
Mushroom Popcorn Kernels

These kernels are the best for creating gourmet popcorn. Mushroom kernels are round, denser, and sturdier than traditional kernels.

Cake Batter Popcorn
Because this recipe’s base is so simple, I find adding fun, different flavorings easy! I decided to turn a batch into Cake Batter Popcorn and loved the results!
I added a 1/2 a cup of Funfetti Cake Mix to the melted marshmallows and butter, giving the popcorn a fun, cake batter flavor.
You should treat the cake mix before adding it to the mix. Since you shouldn’t consume raw flour, it’s best to spread the cake mix out first on a baking sheet and bake it at 350 for 5 minutes.
Festive Marshmallow Popcorn Ideas
Again, because this recipe base is so simple, I find adding fun add-ins easy! For the Fourth of July, I decided to add blue sanding sugar and Patriotic sprinkles to the popcorn.
It gave it a fun, festive flare!
You could do this with any holiday! You could add colorful M&Ms, sprinkles, food coloring, or chocolate chips.

Ingredients
- 3/4 cup mushroom popcorn kernels
- 1 cup butter
- 1/2 cup treated Funfetti Cake Mix*
- 16 ounces mini marshmallows
Instructions
- Using an Air-Popped Popcorn Popper: Air Pop works best for popping mushroom popcorn kernels. Our machine has a 1/4 cup measuring cup, so we pop three batches for one recipe.
- Using a strainer or wire cookie rack, dump the popcorn over it to allow the unpopped kernels to fall through. Then, place the popcorn in a large bowl.
- Melt the butter in a saucepan on medium-low heat. Add the marshmallows to the butter and stir until melted. Then, stir in the cake mix.
- Pour marshmallow sauce over popped popcorn and mix until well coated. Enjoy!!
