Meal Prep Burrito Bowls

These meal prep bowls are some of my favorite bowls I’ve ever made. I love them because they are so unique and different from the other bows that I have made in the past. My inspiration for these bowls was to recreate the bowl that I order at Chipotle. I had cilantro lime brown rice, black beans, shredded chicken, and mozzarella cheese in the bowls. Then after I heat the bowls back up, I like to top them with sour cream, guacamole, and salsa. They are so flavorful and delicious!

The chicken in this recipe is my shredded chicken in the Instant Pot. I place a few frozen chicken breasts in the Instant Pot with a half a cup of water. Then, I dump a half a cup of salsa into the pot, and finish it off with a little bit of taco seasoning. Place the lid on the Instant Pot and set it to seal. Set the timer to manual to 24 minutes. When finished cooking, quick release the pressure and shred the chicken with a knife. The chicken comes out juicy and tender every time!

I used black beans in this recipe! You can use whatever beans you like the best, black beans are my favorite! I also use mozzarella cheese, but again, you can use any flavor of cheese you like! That is what is awesome about meal prep bowls, you can make them up to your liking.

Meal Prep Burrito Bowls 
Yields 4 bowls

2 cups brown rice
2 tablespoons cilantro
4 cups shredded chicken
1 can black beans
1 cup mozzarella
Optional Toppings:
Sour Cream
Salsa
Guacamole

Place 1/2 cup cooked brown cilantro lime rice in each bowl. Top with chicken (1 cup), beans (1/4 cup) , and cheese (1/4 cup) and store in the fridge until ready to eat. After heating up the bowls, top with any of the optional toppings. Enjoy!

I cook my rice in the Instant Pot! 2 cups brown rice, 1 cup water, 1 squeezed lime, 2 tablespoons chopped cilantro. 24 minutes on manual, then quick release!

I also cook my shredded chicken in the Instant Pot! I put 3-4 frozen chicken breasts in the pot, with 1 cup of water, 1/2 cup of salsa, and a tablespoon of taco seasoning. 20 minutes on manual, then quick release and shred!

Here’s what’s in it! 

2 Tablespoons butter
1/2 cup diced white onion
1 teaspoon minced garlic
1 jalapeno, seeds removed and diced
4 cups chicken broth
4 chicken breasts
15 ounce can great northern beans
4 ounce can mild green chilis
12 ounce package frozen corn
1 teaspoon lemon pepper
One teaspoon salt
1 teaspoon ground cumin
1/2 teaspoon ground coriander
2 limes, juiced
8 ounce block cream cheese
