Happy Meal Prep Monday! This week, the focus is to eat clean, and eat green! To help you get those greens, I wanted to share with you this amazing sesame chicken rice bowl with green onions and asparagus!
I love a good rice bowl with the perfect sauce! This sesame chicken recipe is perfect if you are like me! This past weekend, Brandon and I tried out a place called “Teriyaki Grill” at the point of the mountain and it was so good! It was very healthy and light and tasted like a home cooked rice bowl! We both gave it a thumbs up so go check it out! They are all over in Southern Utah and Provo area! I think we need one in Sugarhouse!
Of course with any meal prep recipe, you can make this recipe and have it for dinner the same day! You can meal prep it if you want to but most meal prep recipes will comfortably food your family of four! Don’t let the idea of meal prepping scare you, just make it for dinner! The full recipe will easily serve a family of 4-5 people!
Sesame Chicken and Rice Bowls
3 Large Chicken Breasts
6 Tablespoons Honey
4 Tablespoons Ketchup
4 Tablespoons Sugar
2 Tablespoons Soy Sauce
2 Tablespoons Rice Vinegar
1 Tablespoon Sesame Seeds
2 Tablespoons Corn Starch
2 Green Onions
1 Bunch of Asparagus
2 cups brown rice
Preheat oven to 350. Season chicken breasts with salt and pepper and bake for 50 minutes.
In a saucepan, whisk together honey, ketchup, sugar, soy sauce, and rice vinegar. Bring to a boil, stirring consistently, then let simmer until sauce thickens.
Fill a gallon sized ziplock with corn starch. Cube cooked chicken and add to zip lock bag. Shake well, coating the chicken evenly.
Add the chicken to the sticky sauce and coat. Top with sesame seeds, and green onions. Serve over brown rice.
