They are baby red potatoes stuffed with butter, sour cream, bacon, cheese, and green onions, resulting in a mouthwatering treat. Make it with me!

What You’ll Need To Make Mini Twice Baked Potatoes
- 10-16 baby potatoes scrubbed
- 2 tablespoons olive oil
- Salt and freshly ground black pepper
- ½ cup shredded cheddar cheese
- ¼ cup sour cream or plain Greek yogurt
- 2 tablespoons green onions or chives, plus more for garnish
- 1 tablespoon melted butter
- 2 strips of cooked bacon crumbled

How To Make Mini Twice Baked Potatoes
- Preheat the oven to 350 degrees. Prick each potato a few times with a fork. Arrange the potatoes in a single layer on a microwave-safe plate lined with paper towels.
- Bake potatoes for 30-40 minutes, until soft.
- Using an oven mitt or kitchen towel to handle the hot potatoes, scoop out the center of each potato with a spoon of cookie scoop into a medium bowl, leaving a 1/4″ layer of potato on the side of each skin.
- Add cheese, sour cream, bacon, green onions, butter, salt, and pepper to the bowl with the scooped potato filling. Mix well.
- Divide the filling among the potato skins. Return the filled potato skins to the oven and broil until the cheese is melted and bubbly. Remove from the oven.
- Garnish with a dollop of sour cream, additional bacon bits, and more green onion, and serve warm.
