This Overnight French Toast Casserole combines the flavor of french toast with the convenience of a breakfast casserole. It is an easy make-ahead breakfast recipe that is good for a brunch crowd. I love breakfast casseroles that I can make up the night before and stick in the oven in the morning. It’s also a good brunch recipe for a crowd that frees up time so you can spend it with your guests. Make it with me!
What You’ll Need to Make French Toast Casserole
- 8 cups brioche bread cut into 1-inch cubes- you can use ANY bread you want in this recipe! I have even used hamburger buns before and it works great!
- 8 eggs
- 2 ½ cups milk- any milk. I’ve made it with whole and almond milk.
- 1 ½ teaspoons cinnamon
- 1 Tablespoons vanilla
- 3 Tablespoons brown sugar
For the Caramel Syrup
- 1 cup light Karo syrup,
- One cup whipping cream
- 1 cup brown sugar
Additional Toppings for the Casserole
- Whipping Cream
- Fresh Berries
- Powdered Sugar
- Cinnamon
How to Make Overnight French Toast Casserole
- Cut the bread into 1-inch bite-sized pieces and spread out on a cookie sheet.
- Whisk together the eggs, milk, cinnamon, vanilla, and brown sugar.
- Toss the bread in with the egg mixture and fold until coated. Place it into a greased 13×9-inch baking dish. Cover and place in the fridge overnight.
THE FOLLOWING MORNING
- Remove casserole dish from the refrigerator, remove the plastic wrap, and preheat oven to 375°F.
- Bake for 50-60 minutes depending on how soft you want the french toast to be. You want the top to be golden brown.
- Remove from oven and allow to cool slightly.
- Meanwhile, make your syrup by combining the caramel syrup ingredients in a small saucepan over medium heat. Serve hot.
*You can also make this a one day recipe. Simply allow the egg mixture to soak into the bread for a minimum of 4 hours before baking.

You can use ANY bread you want in this recipe. I like using brioche for the flavor, but we have also made this with a variety of loaves of bread, including hamburger buns and it works great!
