What Is Delicata Squash?
Delicata squash is a winter squash with an oblong shape, striped pale yellow skin, and orange-colored flesh. It tastes similar to butternut squash with a velvety inside.
Even though it’s considered a winter vegetable, it’s only available in late summer and early Fall, so now is the time to take advantage!
This dish is so simple, savory, sweet, and delicious! I love serving it as an appetizer or a complimentary side dish to a holiday feast. Christmas Eve, Christmas Day, or even Thanksgiving would be fantastic events for making this squash.
What You’ll Need to Make Roasted Delicata Squash
- One medium delicata squash
- 2 teaspoons minced garlic
- 3 Tablespoons melted butter
- 1/2 cup freshly grated parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
How To Make Parmesan Crusted Delicata Squash
- Heat the oven to 425°F. Prepare a 9×13 baking dish.
- Clean the outside of the squash, then cut the squash in half lengthwise. Scoop out and discard the seeds. Cut each squash half into 1-inch-thick slices.
- In a small bowl, whisk together the melted butter and garlic.
- Spread half of the melted butter and the garlic over the bottom of the baking dish. Then, sprinkle all but a few tablespoons of the Parmesan cheese on top.
- Arrange squash slices on top of the cheese. Drizzle the remaining butter mixture over the squash—season with salt and pepper. Sprinkle the remaining cheese on top.
- Roast the squash for 20 to 30 minutes or until golden brown and tender. Enjoy!
