Fresh Peaches
The secret to this recipe is using delicious, fresh, ripe peaches! Luckily, peaches are in season right now and they are EVERYWHERE! You can find peaches at your local grocery store, or at farmers markets. They are delicious in this Peach Baked Oatmeal.
Any type of peach will work with this recipe! If you are using canned peaches, just make sure to drain off as much of the juices as you can. Both will work!
What is Baked Oatmeal
Baked Oatmeal is just as it sounds, it’s oats that are baked rather than microwaved. Baked Oatmeal is great because you can make a large batch at the beginning of the week and it’ll save.
It’s also nice because you can eat this hot or cold! If I’m eating it hot, I like to put a dot of Greek Yogurt on top and cool everything down, similar to eating peach cobbler with ice cream.
Other Flavor Options
For this particular recipe, you can use any type of fruit you want! I personally love it with the peaches!
Other options include blueberries, bananas, strawberries, cherries, blackberries, and raspberries.
You could also skip adding the fruit into the actual oatmeal, and simply use it as a topping. This works great for when you are making this recipe to feed a crowd!

Peach Baked Oatmeal
This Peach Baked Oatmeal is the perfect transition recipe from summer to fall! Made with fresh peaches, oats, cinnamon, and topped with greek yogurt.
Ingredients
- 2 cups old fashioned rolled oats
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 1 3/4 cup unsweetened almond milk, or milk of choice
- 5 tablespoons maple syrup
- 1 egg
- 2 tablespoons almond butter
- 1 teaspoon vanilla extract
- 1 cup diced peaches, plus extra slices for topping
- Optional: 9 tablespoons Greek Yogurt
Instructions
- Preheat oven to 350° F. and spray a 9x9 or similar baking dish with cooking spray.
- In a large bowl stir together the oats, cinnamon, baking powder, and salt. In a separate bowl whisk together the milk, maple syrup, egg, almond butter and vanilla.
- Pour the wet ingredients in with the dry and stir until combined. Add in the peaches and stir together. Pour the mixture into the prepared baking dish and top with peach slices.
- Bake for 40-50 minutes or until the top is golden and the oatmeal is set. Let it rest for 5 minutes before serving. Top with additional peaches and greek yogurt.
