Peanut Butter Brownie Explosion Pie
This Peanut Butter Brownie Explosion Pie is as delicious as the name makes it seem! It’s made with a peanut butter cookie crust, a brownie center, then it is topped with a whipped peanut butter frosting, chocolate drizzle, and peanut butter candies! It’s a pie sent straight from heaven! This pie is made using Lehi Mills double fudge brownie mix to make it easy to throw together!

I have been a big fan of Lehi Mills for years! Their unbleached turkey has been my go to flour! The Turkey Brand Flour is a variety specific blend of hard wheat; milled to achieve excellent baking for white pan breads, hearth rolls, and variety breads with good color, flavor, and texture. To take full advantage of the strength of this flour, you may have to mix the dough longer than you typically would.
They don’t only sell flour! Lehi Mills also carriers a wide variety of other products, including pancake, waffles, muffins, and brownie mixes.
I used their double fudge brownie mix in this pie and I loved it! The mix is super easy to whip up, and the brownie is so fudgey and good! I just followed the instructions on the box, then added it to the peanut butter crust! So good!

If you follow me on Instagram, you know that I made a bold statement this month. I told everyone that I am not a fan of pie, which is the truth. But, I challenged myself this month that I am going to #MakeFriendsWithPie.
My problem with Pie is that I don’t like warm fruit at all. Naturally, I don’t like fruity pies. I wanted to create a pie that wasn’t fruity or made with a traditional pie crust.
That’s why I created the PEANUT BUTTER BROWNIE EXPLOSION PIE! It’s made with a peanut butter cookie crust, a layer of fudgey brownie, and a layer of peanut butter frosting! I then topped it with recess pieces, mini peanut butter cups, and drizzled it with melted chocolate!
Let me tell ya, this pie does not disappoint! IT’S SO GOOD!! So rich, and decadent, and flavorful! The best pie I’ve made during this challenge so far!
DO I LOVE PIE NOW?
I was a big fan of this peanut butter brownie pie, because it didn’t really have any “pie” elements. It’s a peanut butter cookie, with brownie, and peanut butter frosting! So in all reality, it’s better than a pie in my honest opinion! I am having way too much fun with this #MakingFriendsWithPie challenge!

Peanut Butter Brownie Explosion Pie
Ingredients
For the Peanut Butter Crust
- 4tbsp butter softened
- 1/2 cup brown sugar
- 1/2 cup peanut butter
- 1 egg room temperature
- 1 tsp vanilla extract
- 1 cup all purpose flour
- 1/4 tsp baking soda
- 1/8 teaspoon salt
For the Brownie Layer
- 1 box Lehi Mills Double Fudge Brownie Mix
- 1/2 cup water
- 1/3 cup vegetable oil
For the Peanut Butter Frosting
- 5 Tablespoons unsalted butter, softened
- 1 cup creamy peanut butter
- 1 cup powdered sugar
- 1/3 cup heavy cream
- 1 teaspoon pure vanilla extract
- ¼ teaspoon salt
Additional Toppings
- Recess Pieces
- Mini Recess Cups
- Melted Chocolate for drizzle
Instructions
Preheat Oven to 350
For the Peanut Butter Crust
For the Brownie Layer
In a mixing bowl, mix together brownie mix, water, and vegetable oil. Pour batter into peanut butter crust.
Cover Pie and cook for 45-55 minutes, or until brownie is set. Allow to cool completely before frosting.
For the Peanut Butter Frosting
With a handheld or stand mixer fitted with a paddle or whisk attachment, beat the butter on medium speed until creamy, about 2 minutes. Add the peanut butter, confectioners’ sugar, heavy cream, vanilla extract, and salt with the mixer running on low. Increase to high speed and beat for 3 full minutes. Add up to 1/4 cup more confectioners’ sugar if frosting is too thin or another Tablespoon of cream if frosting is too thick.
