How Do You Make Peanut Butter Cookies?
Making peanut butter cookies from scratch is really simple! These are my favorite old-fashioned peanut butter cookies.
The peanut butter cookie recipe for these sandwich cookies has been in my family for years! It really is the best recipe for classic peanut butter cookies!
The cookies themselves are soft and chewy, with a golden brown bottom and edge that gives it the perfect amount of crunch.
I start by making the peanut butter cookie dough in my stand mixer. You can find the full step-by-step measurements and instructions below.
After the dough is made, section it into three equal portions. This is where this recipe is unique.
Rolling the Dough for these Peanut Butter Cookies
Place each section of dough into a piece of wax paper and form it into a log. Roll the wax paper up around the dough, until it forms a round log of dough. Repeat with the other two portions of dough.
Place the dough logs in the fridge and refrigerate for a minimum of 1 hour, or up to overnight. If you want to make this dough in advance, place the rolls inside a ziplock bag and it will keep in the fridge for up to 4 days.
When it comes time to cook up the dough, simply unroll the wax paper, and cut the dough into 12-15 disks.
Place the cutout dough on a cookie sheet lined with parchment paper.
Using a fork, press an x pattern into the top of the dough before baking for 8-10 minutes, or until the edges are golden brown.
How To Make Peanut Buttere Sandwich Cookies
After the cookies are baked, spread about a tablespoon of creamy peanut butter on the backside of one cookie.
Then sandwich another cookie on top and press to stick them together.
This will make these peanut butter cookies into a sandwich will a creamy peanut butter center!

What Peanut Butter Should I Use?
It works best when you use creamy, regular peanut butter like Skippy in this recipe. The all-natural peanut butter is softer and has more oil, which can mess with the dough.
I also like to use creamy peanut butter like Skippy for the centers of the sandwiches as well.

Peanut Butter Sandwich Cookies
These Peanut Butter Sandwich Cookies are two soft and chewy homemade peanut butter cookies sandwiched with a creamy peanut butter center.
Ingredients
- 1 cup unsalted butter
- 1 cup creamy peanut butter
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 eggs
- 2 1/2 cups flour
- 1 teaspoon baking powder
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- Additional cup of creamy peanut butter
Instructions
- To a stand mixer, mix together the butter, peanut butter, sugar, brown sugar, and eggs until smooth and combine.
- Next, add the flour, baking powder, baking soda, and salt and mix at a low speed until dough is formed.
- Divide the dough into three equal pieces and roll them into logs in wax paper. Place the rolled dough in the fridge for a minimum of 1 hour, a maximum of 4 days.
- When you are ready to bake, preheat the oven to 350°F.
- Slice the dough with a sharp knife and place it on a cookie sheet lined with parchment paper. Use a fork to press a crisscross pattern into the top of each cookie.
- Bake for 8-10 minutes, or until the edges are browned. Allow the cookies to cool.
- Spread one tablespoon of creamy peanut butter on the back of one cookie, then sandwich another cookie to it. Repeat with all the cookies and enjoy!
