Pumpkin Chocolate Chip
This time of year, Pumpkin Chocolate Chip is all the rage! I believe me when I say that I am here for it! I love a classic pumpkin chocolate chip cookie! Really, there isn’t anything better in October.
That was really the inspiration behind this pumpkin energy bites. I wanted to create a fall inspired flavor, and what better than pumpkin chocolate chip! These bites truly exceeded my expectations. So, so yummy!
What Are Energy Bites?
Energy Bites are exactly what they sound like! These are little balls that are filled with nutritious ingredients that help to keep you feeling full and energized throughout the day!
Some call them protein bites, protein balls, energy balls, and all other sorts of names! I tend to call them whatever fits best with the recipe title. Whatever you choose to call them, it’s all the same! These Pumpkin Energy Bites are some of my favorites!
What Ingredients Do I Need?
- old-fashioned rolled oats
- ground flaxseed
- chia seeds
- pumpkin seeds
- pumpkin pie spice
- sea salt
- almond butter
- pumpkin
- honey
- vanilla extract
- mini chocolate chips

Pumpkin Engery Bites
If You Like All Things Pumpkin Chocolate Chip, You Will Love These Easy, No-Bake Pumpkin Energy Bites. The Perfect Healthy Treat For Fall!
Ingredients
- 1 1/4 cups old-fashioned rolled oats
- 1/4 cup ground flaxseed
- 1 tablespoon chia seeds
- 2 tablespoons pumpkin seeds
- 2 1/2 teaspoons pumpkin pie spice
- A pinch of sea salt
- 1/2 cup creamy almond butter
- 1/4 cup canned pumpkin
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 1/4 cup mini chocolate chips
Instructions
- In the bowl of a stand mixer, add the oats, flaxseed, chia seeds, pumpkin seeds, pumpkin pie spice, and salt. With the paddle attachment, mix on low until ingredients are combined.
- Add the almond butter, pumpkin, honey, and vanilla. Mix until the ingredients come together.
- Fold in the mini chocolate chips.
- Roll the mixture into balls, about 2 tablespoons per ball.
- Place the pumpkin energy bites into an airtight container and store in the refrigerator for up to 1 week.
