What You’ll Need to Make Pumpkin Rice Krispie Treats
- 3 Tablespoons butter
- 1/4 cup pure pumpkin puree
- 1 teaspoon pumpkin pie seasoning blend
- 10 ounces mini marshmallows, reserve a handful
- 6 cups Rice Krispie cereal
- 1/4 cup cinnamon chips
- 1 teaspoon coconut oil
The cinnamon chips make this recipe! Cinnamon and pumpkin pair so well together, so the drizzle on the top is what makes these cereal bars special!
You can find cinnamon chips this time of year at most grocery stores. They are made by Hershey.
I typically find them at Lee’s or Dick’s Market. Orson Gygi also carries them year-round.
If you can’t find cinnamon chips, you could also use regular chocolate chips or white chocolate chips for the drizzle.
Variations for Pumpkin Rice Krispie Treats:
- Make these treats into pumpkin shapes! Simply shape each rice krispie treat into small balls for the pumpkin. Top it off with a tootsie roll stem and you have yourself a fun party treat or lunch snack!
- Make them in the microwave! Simply place the butter, pumpkin and marshmallows in a microwave safe bowl. Heat in the microwave for 2 minutes. Stir and cook for an additional minute. Stir until smooth. Allow mixture to cool and then add the cereal and mix until combined. Place in prepared pan or shape.
