Pumpkin Spice Snicker Doodles

A halloween favorite dessert are these yummy Pumpkin Spice Snicker Doodles! If you love cinnamon sugar and pumpkin, this dessert is for you! A fun twist on the traditional snicker doodle! We love the bright orange, fall color these cookies turn out to be! So fun and bite sized, they are a great treat to take to your party!

These cookies are some of my favorite because they are so chewy! The trick to this recipe is that the longer you let them cool on the baking sheet, the chewier the cookies get! When storing them, place them in a ziplock baggie, but don’t close it all the way! When you cook with pumpkin puree, the cookies will sweat if they can’t breath, so to avoid a sticky mess, leave the bags open! 
I am a big fan of Halloweeen! I go all out with decorations, treats, and costumes! This year, my husband and I are dressing up as Kim Kardashian and Kayne West! Pumpkin Spice Snicker Doodles

1/2 cup butter, melted
1/4 cup brown sugar
1/2 cup sugar
1 teaspoon vanilla
6 tablespoons pumpkin puree
1 and 1/2 cups flour
1/2 teaspoon salt
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves

Cinnamon Sugar Mix
1/4 cup sugar
1/2 teaspoon cinnamon

In an electric mixer, whisk together melted butter, brown sugar, and sugar until no lumps remain. Add the vanilla and pumpkin until smooth.

Add the flour, salt, baking powder, baking soda, cinnamon, nutmeg and cloves to the wet ingredients. Mix on low speed until combine. Dough will be soft.

Chill in the fridge for 30 minutes.

Preheat oven to 350. Remove from fridge.

Mix together the sugar mixture blending together the sugar and cinnamon. Roll 1/2 inch balls, coat in the cinnamon sugar mixture and place on a lined cookie sheet.

Bake the cookies for 8-10 minutes. Allow cookies to cool on baking sheet for 10 minutes. Enjoy!
