Raw Carrot Salad
This salad recipe is hardly a salad. The only vegetables it has are carrots.
But I promise, the flavor is delicious, and this is a recipe you will want to make again and again!
This recipe works best when large carrots are peeled into thick, noodle-like strips. To save time, you could also do this with shredded carrots to make a shredded carrot salad.
Whichever carrots you choose to use, you can’t go wrong with this carrot salad ginger dressing.
FOR THE HOMEMADE GINGER SESAME DRESSING
- Canola or Avocado Oil
- Sesame Oil
- Rice Wine Vinegar
- Sugar
- Soy Sauce
- Ground Ginger
- Dry Mustard
- Black Pepper
- Sesame Seeds

Raw Carrot Salad
This raw carrot salad with ginger dressing is the most delicious way to enjoy carrots! It only requires a few ingredients, such as peeled carrot strips.
Ingredients
- 4 large carrots, skin removed and peeled into strips
- 1 cup canola oil
- 3 Tablespoons sesame oil
- 1/2 cup rice wine vinegar
- 1/3 cup granulated sugar
- 1/4 cup soy sauce
- 1 1/2 teaspoons dry mustard
- 1 1/2 teaspoons ground ginger
- 1 teaspoon black pepper
- 1 teaspoon sesame seeds
Instructions
- Remove the skin of the carrots, then peel them using a peeler into long, noodle-like strips—place in a bowl.
- In a small bowl, whisk together all of the remaining ingredients.
- Pour as much of the dressing as you'd like over the carrots and toss to coat. Store the rest in the fridge. Enjoy!
