These Red Rock Burgers are my copycat recipe for one of my favorite cheeseburgers from Red Rock Brewery. They are always served with carrot chips and a side of ranch dip. It’s the perfect easy summer dinner and a fun shake-up to your typical burger night. Make it with me!
Red Rock Burgers
Here’s what you’ll need to make the perfect Red Rock Burger my way!
- Pita Bread- I buy mine from Costco, but any pitas will do.
- Hamburgers- I like the frozen burger patties from Costco for convenience and to have on hand all summer.
- Johnny’s seasoning- My favorite burger seasoning from Costco
- Swiss Cheese
- Yellow Onions- to caramelize
- Red Onions- to serve raw
- Butter Lettuce
- Tomato
- Garlic Aioli Sauce- homemade recipe below
- Carrot Chips
- Ranch Dressing
How to Prepare the Burgers
I love cooking my hamburgers out on the grill during the summer months. Nothing tops it for me!
However, if it isn’t summer or grilling season, you can prepare the burgers on the stove or even in the air fryer. Here’s how!
Cook up your hamburger patties however you like them best!
How to make Garlic Aioli Sauce
- 1-2 medium cloves garlic, pressed or minced
- 2 teaspoons lemon juice, to taste
- 1/4 teaspoon salt
- ½ cup good quality mayonnaise
- Optional: ¼ teaspoon Dijon mustard
Blend everything with an immersion blender and, enjoy!
How to Build a Red Rock Burger
My favorite burgers are built on pita bread as the bun! It’s a fun shake-up from the classic hamburger bun and, I am here for it!
The pita gives it a delicious flavor and a pocket to hold all that goodness in.
- Warm the pita bread.
- Brush both sides with aioli.
- Cut your cooked cheeseburger patty in half and place it on one half of the pita.
- Layer on your caramelized onions, red onions, tomatoes, and lettuce. Secure with a toothpick.
- Serve with carrot chips and ranch, and enjoy!

Red Rock Burgers
A delicious cheeseburger patty topped with homemade aioli, caramelized onions, lettuce, and tomato served in a warm, yummy pita bread pocket.
Ingredients
- 4 hamburger patties
- 4 pita bread pockets
- 4 slices Swiss cheese
- 1 yellow onion
- 1/4 cup butter
- 4 pita bread pockets
- 1 red onions, sliced thin
- 8 butter lettuce leaves
- 4 slices tomato
- Garlic Aioli Sauce
- Carrot Chips
- Ranch Dressing
Instructions
- Prepare your hamburger patties on the grill. Season with seasoning salt and cook until the internal temperature reaches 165 degrees. Top with cheese and melt.
- Slice yellow onions thin and add them to a heavy bottom pot on the stove with the butter. Cook on medium heat until translucent and caramelized.
- Warm the pita bread. Brush both sides with aioli.
- Cut the cooked cheeseburger patty in half and place it on one half of the pita.
- Layer on the caramelized onions, red onions, tomatoes, and lettuce. Secure with a toothpick.
- Serve with carrot chips and ranch, and enjoy!
