Hello all of my friends and followers! Are any of you Utah based? If you’re not, let me inform you that today just happens to be the biggest day of college football because the University of Utah plays Brigham Young University! Utah vs BYU Cupcakes! I have whipped up some Rivalry themed cupcakes for today! We have a white cake cupcakes, dyed red and blue, with a cream cheese frosting, topped with sprinkles and white chocolate colored letters! YUM! Let the war, and the snacking, begin!

If you aren’t Utah based, you probably still know all about the rivalry between BYU and UTAH. It’s a pretty big deal around here! I come from a divided house! My parents both went to BYU and are very proud BYU alumni! My husband and his parents, both graduated from the U of U, and are die hard Utah fans! Growing up, I always thought of myself as a BYU fan because my parents went there. Then I got married and moved to Salt Lake, and now I am a full time student at the U of U! I took my time deciding, but I can officially say that I am a University of Utah fan! Go UTES!!

If you are undecided or have loyalty to both teams, I have a special little something for you! I bring you the double fan cupcake! This cupcake has both red and blue batter, as well as it represents both teams! As my husband would call this cupcake, the worst kind of fan. In this rivalry, you have to choose! But with these cupcakes, you can have both!
How to Make the Team Letters out of White Chocolate
These Utah vs BYU cupcakes are so fun because they are easy and delicious! When you are making them at home, you don’t have to support both themes and make both flavors! You pick your side and stick with it! The cupcakes are made with a white cake mix, leaving the possibilities endless for coloring! I used a cream cheese frosting because I love the way that the edges get crisp. The letters are made from printing out the design you want for each cupcake on a piece of paper, placing wax paper over the top, tracing the letters with white chocolate, and letting it sit in the freezer until they are set! Super simple and easy, and you can do this with anything you need!

Rivalry Utah Vs BYU Cupcakes
I have whipped up some Rivalry themed cupcakes for today! We have a white cake cupcakes, dyed red and blue, with a cream cheese frosting, topped with sprinkles and white chocolate colored letters!
Ingredients
- 1 box white cake mix
- 3 eggs
- 1 cup water
- 1/2 cup vegetable oil
- Red & Blue food coloring
- Frosting
- 1 8 ounce package cream cheese
- 1/2 cup butter
- 1 teaspoon vanilla
- 1 pound powdered sugar
- Team Letters
- 2 cups white chocolate melting chips
- Red & Blue food coloring
Instructions
- Preheat oven to 350.
- Prepare cupcakes as directed on the package. If you are cheering for one time, dye your batter that color and begin cooking. If you are wanting to make both, half the batter and dye one red and the other half blue.
- Divide into 24 cupcake tins and bake for 18-22 minutes. When finished baking, let them cool completely.
- For the frosting, start by creaming together cream cheese and butter until smooth.
- Next, add the vanilla.
- Finally, one cup at a time, add in the powdered sugar making sure it is completely mixed in and smooth.
- For the team letters, prepare a stencil by printing off the desired letters off the internet. Place the paper in a cookie sheet and top with wax paper.
- Next, in a microwave safe dish, melt down the white chocolate chips in 30 second increments, stirring in between, until smooth. Color the chocolate the color you desire.
- Add the white chocolate to a piping bag or plastic squeeze bottle and pipe the letter.
- Let the tray set in the refrigerator for at least 30 minutes to harden.
