This Roasted Acorn Squash is one of my favorite fall side dishes to make! It’s the easiest acorn squash recipes you can make! I love roasting squash because it really brings out the natural flavors and sweetness! For this recipe, I add a little bit of butter, maple syrup, and cinnamon to sweeten it and help it to caramelize! This would be the perfect side for any dinner, or for your Thanksgiving table!
Acorn Squash
You can buy acorn squash at most grocery stores. They have a dark green exterior and a soft, orangey yellow flesh center.
To prepare an acorn squash before roasting, I first like to cut it in half lengthwise, with the ridges. Then, I remove the seeds with a spoon.
Lay the squash on the flat side and cut into 1 inch thick slices against the ridges. This gives each piece a pretty, crimped edge.
Brush with maple butter glaze before baking!
You can eat the Roasted Acorn Squash with the skin on, and I often do! If you want to remove the skin, I think it’s easier to remove it after it’s been baked rather than before.
Maple Butter Glaze
For this recipe, I like to toss the squash in a homemade maple butter glaze! The acorn squash is natural sweet, so I like to add a little maple, butter, and cinnamon to it to bring out the sweetness.
Making the maple butter glaze is very easy! All you need is to place the maple syrup, butter, cinnamon, and salt in a microwave safe dish.
Microwave for one minute, or until the butter is melted. Once melted, mix it all together and brush it over the tops of the squash. Sprinkle with additional cinnamon if you’d like.
Then bake in the oven as directed!

Roasted Acorn Squash

Ingredients
- 2 acorn squash
- 1/4 cup pure maple syrup
- 2 Tablespoons butter
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350F.
- Wash the squash. Trim the top and bottom off each squash, then cut in half from top to bottom.
- Spoon to remove the inner seeds and strings. Lay each acorn squash half on its flat side, and cut into 1-inch thick slices.
- Microwave together the maple syrup, butter, cinnamon, and salt for about 60 seconds, until the butter has melted.
- Place the acorn squash slices on a rimmed sheet pan lined with foil in a single layer, then brush the maple glaze onto both sides of the squash.
- Roast the squash for 25 minutes. Flip and bake for an additional 5 minutes, or until soft. Enjoy!
