Salted Caramel Center
The trick to making these cookies OUT OF THIS WORLD delicious and totally over the top is the caramel you use in the center.
Sure, you can use individually wrapped caramels, like you would get from the grocery store. Those will work just fine!
But if you want these cookies to be next level, I suggest using a Salted Caramel square in the center! These Caramel Cubes pictured here are from Mrs Calls! You could also use caramel cubes from Rocky Mountain Chocolate Factory or any other candy store!
One Salted Caramel square will make 4 cookies! Just quarter the cube and use a small piece in the center of the cookie.
Cookie Queen
Desserts are my jam! I love making cookies, brownies, cakes, and treats! I like to think of myself as the Cookie Queen! A little extra? Maybe. I love making cookies because I love eating cookies! If you were to ask me what my favorite cookie is, I would have to say a classic chocolate chip. But, throw a little salted caramel in the center and you’ve got a whole new level of cookie love!
Best Served Warm
As you can imagine, these cookies are best served warm! Give them a couple of minutes to cool after they finish cooking, so the caramel in the center isn’t piping hot.
In order to get that ooey, gooey, creamy, delicious center, serve these cookies up warm!
You can heat leftover cookies up in the microwave! It only needs about 10 seconds to get the center soft and creamy again! Trust me on this one, you want to eat these cookies warm. YUMMMMM!!!

Salted Caramel Stuffed Cookies
The most delicious, most irresistible Salted Caramel Stuffed Cookies! This is what a caramel lovers dreams are made of!
Ingredients
- 1 cup butter
- 3/4 cup sugar
- 3/4 cup packed brown sugar
- 1 tablespoon vanilla extract
- 2 eggs
- 2 3/4 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup milk chocolate chips
- 12 salted caramel squares, quartered
Instructions
- Preheat oven to 375° F.
- Cream together butter, sugar, and brown sugar in a stand mixer on medium low speed.
- Add vanilla and eggs, and beat until incorporated and smooth, should only take about a minute.
- Add the flour, baking soda, and salt to the stand mixer, and turn it on a low speed.
- When the dough begins to come together and look like "cookie dough", add the chocolate chips. Mix for an additional 30 seconds on low, just until the chocolate chips are incorporated.
- In the meantime, quarter the salted caramel squares and set aside.
- Using a cookie scoop, measure out dough and drop it into your hand. Flatten the dough out, place the salted caramel candy in the center, then fold the dough back up and around, making sure the caramel is in the center of the dough ball.
- Place on a cookie sheet lined with parchment paper. Repeat step 7 until all the dough balls are formed.
- Bake at 375 for 10-12 minutes, or until the tops are golden.
- Cool on baking sheets for a few minutes before serving, to be sure the cookies are warm, but the caramel center is not piping hot.
