A Semi-Homemade Recipe
Growing up, I loved watching semi-homemade with Sandra Lee. She was one of my favorites on food network.
This recipe feels like a semi-homemade recipe because I used a lot of things that were already cooked and prepared, making this recipe a breeze.
I used sausage that was fully cooked, which I expand on below and also a prepped holiday hash from Trader Joes that is hearty and delicious.
What sausage should I use?
For this recipe, I like to use the aidells chicken and apple sausage that you can find at the grocery store like smiths and Costco.
This sausage comes fully cooked, and you only have to reheat it before serving. That helps to make this dinner recipe and breeze!
If you want to use another brand of sausage, you can! You will just want to make sure that you cook it completely before adding the additional ingredients like onion, sweet potatoes, and celery!
Holiday Vegetable Hash from Trader Joe’s
In this recipe, I used the holiday vegetable hash mix that you can buy this time of year from Trader Joe’s! I like it because it has a variety of veggies and seasonings chopping into tiny cubes that cook up quickly.
You do not have to have the holiday hash starter to make this recipe because you can make it yourself!
To make the mix at home you’ll need one sweet potato, cubed up small, one butternut squash, cubed up small, diced celery, diced red onion, and rosemary, parsley, and sage for the seasonings.
What tortellini should I use?
You can use any tortellini you like for this soup! I used a tortellini that had a blend of three cheeses from Barilla.
You’ll want to pay attention to the cook time on the tortellini you choose to use. Some cook for only 3 minutes, while others need a full 10 minutes.
The package I used was the Barilla 3 cheese tortellini that is found in the pantry pasta aisle. It needed to be cooked for 10 minutes.

Sausage and Tortellini Soup
Ingredients
- 2 Tablespoons butter
- 1/2 finely diced red onion
- 1 cup small cubed sweet potato
- 1 cup small cubed butternut squash
- 1 cup diced celery
- 1 teaspoon dried rosemary
- 1 teaspoon dried sage
- 1 teaspoon dried parsley
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 6 Aidell chicken and apple sausage links, cut into disks
- 5 cups beef broth
- 1 pound tortellini pasta of choice
- 1 cup heavy cream
- 1/2 cup parmesan cheese
Instructions
- To a large stockpot or dutch oven, melt the butter down on medium heat. Add the onion, sweet potatoes, butternut squash, and celery. Sauté veggies for 3-4 minutes, until onions are soft.
- Add the rosemary, sage, parsley, salt, pepper, and sausage links and cook for an additional minute.
- Add the beef broth to the pot and turn the heat up to high to bring the soup to a boil. Once boiling, add the tortellini and cook as long as the package instructions say.
- Once the tortellini is cooked completely, turn the heat to low. Slowly add the heavy cream and stir quickly. Add the parmesan cheese and serve.
Notes
If using the Trader Joes Holiday Vegetable Hash, I add the entire container in step one. Sauté the veggies and seasonings first before adding the sausage. Then, follow steps 3&4 above.
I used the Barilla 3 Cheese Tortellini Pasta when I made this recipe. It needed to boil for 10 minutes to cook completely.
I used the Aidell Chicken & Apple Sausage which I bought at Costco.
