What You’ll Need to Make Sheet Pan Gnocchi
- Gnocchi– any gnocchi will work! You don’t need to boil it ahead of time, it will cook on the pan!
- Chicken Apple Sausage– I like using the aidells brand best!
- Broccoli– or any other green vegetable!
- Bell Peppers– I like using a variety of colors to make this dish pop!
- Cherry tomatoes– Be sure to half them first before roasting so those delicious juices help season the dish!
- Red onion– Dice it up small and add it to the dish for flavor!
- Pesto– You can do homemade or your favorite jarred sauce works great! I like using the Costco Pesto or the Barilla brand from the grocery store.
- Fresh thyme leaves– Add them after baking for added freshness and flavor!

How to Make Sheet Pan Gnocchi
- First, preheat your oven to 400°F. Line your baking sheet with foil for easy clean up.
- Add all the ingredients to a bowl, minus the thyme. Toss the vegetables, sausage, and gnocchi with the pesto until everything is well coated.
- Transfer the mixture to the baking sheet and pop it in the oven.
- Roast for 15-20 minutes, or until the vegetables get brown and the gnocchi is soft.
- Add the fresh thyme sprigs and enjoy!

Ingredients
- 12 ounces dry gnocchi
- 6 Aidells chicken apple sausages - cut into 1/4-inch rounds
- 1 pint cherry tomatoes, halved
- 1 cup broccoli
- 2 bell peppers, chopped
- 1/2 red onion, diced
- 3/4 cup pesto sauce
- 1 teaspoon salt
- ½ teaspoon cracked black pepper
- 2-4 sprigs of fresh thyme
Instructions
- Preheat oven to 400 degrees. Line a baking sheet with foil.
- Combine gnocchi, sausage, tomatoes, broccoli, bell peppers, red onion, pesto, salt and pepper. Toss to combine, then spread out on the sheet pan.
- Roast in preheated oven for 15-20 minutes until gnocchi is tender and tomatoes burst.
- Remove from oven and add the fresh thyme, Enjoy!
