This Shredded Sweet Chicken is the most tender and delicious chicken you’ll ever have. Perfect for tacos, burritos, quesadillas, or salads. Similar to the Cafe Rio shredded sweet pork recipe on my blog already, this is the chicken version! This mouthwatering dish is cooked to perfection in the Instant Pot! Make it with me!
Sweet Shredded Chicken
The inspiration for this recipe honestly came to me because I love my copycat recipe for Cafe Rio Sweet Pork so much, I thought I should try it with chicken.
The biggest difference is that chicken cooks much faster than a pork roast, making this an easy protein to prep! The flavors and textures of the sweet pork and the sweet chicken are actually really similar.
I really loved how this recipe turned out! The flavor is awesome and the instant pot cooks everything up so quickly!
I have eaten the shredded sweet chicken just like a would sweet pork, in tacos, quesadillas, and salads!

What You’ll Need to Make Shredded Sweet Chicken
- 1 1/2 pounds chicken breasts or thighs- thawed or frozen works great!
- One can coca cola
- 1 6 ouce can diced green chilis, drained
- 1/2 cup mild salsa
- 1 cup brown sugar
- One teaspoon cumin
- 1 teaspoon paprika
- One teaspoon onion powder
- 1 teaspoon chili powder
- One teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
How to make Sweet Chicken
- Add the chicken, coca cola, diced green chilis, salsa, brown sugar, cumin, paprika, onion powder, chili powder, garlic powder, salt, and pepper to the instant pot.
- Lock the lid, set the valve to seal, and manually set the pressure for 24 minutes.
- When the Instant Pot is finished cooking, quick release the pressure. The chicken should be fork tender and shreddable. Shred in the juices with two forks or a hand mixer.
- Enjoy chicken in your favorite recipe and with your favorite toppings! Be sure to try out my homemade cilantro lime tomatillo dressing with this one!
Can I Make This Recipe in My Slow Cooker?
Yep! Most Instant Pot recipes can be converted into slow cooker recipes and vice versa!
For this recipe, you’ll want to add all of the ingredients to your slow cooker and simply cook on high for 4 hours or low for 8 hours!

Notes
This Instant Pot shredded sweet chicken recipe works with either thawed, fresh chicken or frozen chicken! The cook time is the same! Unless the chicken breasts are frozen and pretty large, I'd increase the cook time to 28 minutes.
