I have been on a bit of a Rice Krispie kick lately! I love making them for a treat, for road trips, for my Sunday School class, and more! I love how soft and chewy they are! Plus, they are the perfect grab and go treat! Once I make a batch and allow it to set, I cut them into 12 pieces and wrap them individually in plastic wrap to keep them portable and fresh! They are the perfect snack to share! Make them with me!
Soft & Chewy Rice Krispies
Yields 12
8 cups Rice Krispie cereal
1 bag mini marshmallows, divided
1 cup butter
1 teaspoon salt
1 teaspoon vanilla
In a sauce pan over medium low heat, melt butter. Add in salt and vanilla and stir until smooth. Next, add 3/4 of the bag of marshmallows, stirring repeatedly, until the marshmallows melt. Once melted, pour over cereal treats and mix well until all the cereal is coated. Then, fold in the remaining 1/4 bag of marshmallows.
Grease and line a 9×13 pan. Press Rice Krispie mix into pan until flat. I like using the butter wrappers to press the mix down because it’s a non-stick paper.
Allow Rice Krispies to cool completely. Cut and place individually in wax paper.
