You may be wondering, what does the addition of sourdough do in this recipe? Does banana bread require an active yeast component?
The answer is no, the sourdough is not required in terms of helping the dough rise, but it does contribute to the overall flavor!
It doesn’t taste sour like a traditional sourdough loaf, but it does make each bite incredibly moist and soft. Plus, sourdough has amazing benefits for your overall gut health, so the addition is happily welcome!
What Goes Into Sourdough Banana Bread?
- 1 ½ cups mashed bananas (about 3 medium bananas)
- ½ cup sourdough starter, fed or discard
- ½ cup vegetable oil
- ½ cup light brown sugar
- ½ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla
- 1 ¾ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ¾ teaspoon salt
- ½ teaspoon ground cinnamon

What Loaf Pan Should I Use?
This recipe will bake better in a larger loaf pan. A 9×5 loaf pan is perfect for the amount of batter in this recipe!
You can also divide up the batter into a dozen or so muffin tins if you prefer. You’ll want to decrease the cooking time to 22-25 minutes rather than the one-hour bake time for the loaf.
You can use a glass or dark loaf pan for this recipe! I like to do both parchment paper and cooking spray to ensure my banana bread loaf does not stick.

A deliciously soft and incredibly moist sourdough banana bread. This recipe is a delightful treat!
Ingredients
- 1 ½ cups mashed bananas (about 3 medium bananas)
- ½ cup sourdough starter, fed or discard
- ½ cup vegetable oil
- ½ cup light brown sugar
- ½ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla
- 1 ¾ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ¾ teaspoon salt
- ½ teaspoon ground cinnamon
Instructions
- Preheat the oven to 350 degrees F.
- Line a 9X5-inch loaf pan with parchment paper and grease it with cooking spray.
- In a mixing bowl, whisk together the bananas, sourdough starter, vegetable oil, brown sugar, granulated sugar, egg, and vanilla until very well combined.
- Add the flour, baking soda, baking powder, salt, and cinnamon. Mix until just combined, don't over-mix.
- Pour the batter into the prepared pan. Bake for 50-60 minutes until the top is golden brown and a toothpick comes out clean.
- Remove the bread from the pan and let cool on a wire rack. Slice and enjoy!
