What is Sourdough Starter?
My aunt recently shared her sour dough starter with me that has been in her family for generations! I’m thrilled to start playing around with new recipes! These pancakes were the first thing I tried, and they were a 100% success!
The purpose of the starter is to produce a vigorous leaven and to develop the flavor of the bread. In practice there are several kinds of starters, as the ratio of water to flour in the starter varies. A starter may be a liquid batter or a stiff dough. You can make your own starter at home or if you know someone who has one, they can easily share it with you for you to have your own!
How to Make Sourdough Pancakes Overnight
Want to know how to make Sourdough Pancakes Overnight? These are an overnight recipe but they are worth the little bit of extra effort, especially if you already have sourdough starter in your refrigerator. You just need to leave the base of the pancakes on the countertop overnight and let it bubble. Then, in the morning, you throw in the other ingredients and get to cooking them and then, of course, eating them.
We served these pancakes with butter and real maple syrup! You could also top them with powdered sugar, fresh fruit, or even whipped cream!

Sourdough Pancakes
Sourdough gives these Sourdough pancakes a delicious flavor and fluffy texture that you’ll fall in love with! These will quickly become your family’s favorite breakfast.
Ingredients
- 2 cups flour
- 2 cups milk
- 4 tablespoons sourdough starter
- 3 beaten eggs
- 2 tablespoons sugar
- 1 teaspoon salt
- 1 1/2 teaspoon baking soda
- 1/4 cup oil or melted butter
Instructions
The Night Before:
- Mix together flour, milk, and the sourdough starter in a glass bowl. Let it sit overnight on the counter in a warm place.
In The Morning:
- In the morning, remember to take out 4 tablespoons of the starter and place it in a glass jar with the lid and store in the fridge until next time.
- To the remainder of the starter, add the eggs, sugar, salt, baking soda, and oil or melted butter.
- Mix well with a whisk and bake on a pancake griddle or on the stove.
- Top with desired toppings and enjoy!
Notes
*REMEMBER: always take out 4 tablespoons of starter for the next round.
*Sourdough starter needs to be used once a month to stay active.
*I prefer using melted butter over oil in this recipe.
