
This is the most delicious Street Corn Pasta Salad! It’s made with roasted corn, cotija cheese, fresh lime, jalapeños, and cilantro. It’s coated in a creamy lime dressing that marries everything together. It’s tangy, creamy, crunchy, and has the perfect bite. My recipe is sweeter and less hot than traditional street corn pasta salad, but you can customize it to make it your own, too! Make it with me!

What You’ll Need To Make Street Corn Pasta Salad
- 2-3 corn cobs, charred or roasted
- 1 pound rotini noodles
- 2 jalapenos, diced
- 1 cup cilantro, diced
- 3 green onions, diced
- 3 limes, zested and juiced
- 1 cup cotija cheese

For the Dressing
- 1 cup sour cream
- 1/2 cup mayo
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1 teaspoon pepper
If you want to add more heat to this recipe, add 1-2 chipotle in adobo peppers to the dressing and blend it until smooth in a blender.
I prefer to keep this recipe on the sweeter side and really let the lime and corn flavors shine through. It’s up to you!

How to Prepare Street Corn Pasta Salad
- Roast the corn on the grill or remove it from the cob and char in a frying pan until golden brown. Set aside.
- Meanwhile, bring a pot of salted water to a boil and add your pasta. Cook until al dente, strain, and set aside.
- Dice the green onion, jalapeno, and cilantro, crumble/grate the cotija cheese, and zest and juice one lime.
- Combine sour cream, mayo, lime zest and juice, smoked paprika, chili powder, salt, and pepper to make the dressing.
- Add your cooked pasta to a large bowl with roasted corn, green onions, jalapeno, cilantro, and cotija cheese. Pour the dressing over the top and mix well. Top with more cotija and fresh herbs if desired, and enjoy!
