Summer Peach Salad with Burrata
It’s peach season, the most beautiful time of the year! Few things are better than a fresh, juicy, ripe peach that has been perfectly picked and prepared.
This salad also has red, ripe cherries, blackberries, burrata cheese, sliced almonds, and fresh basil.
When making this dish, you’ll want to start with the vinaigrette, crucial to adding flavor to this salad. It’s an unforgettable Lemon Champagne Vinaigrette.

Here’s What You’ll Need
- Ripe Peaches—the riper, the better! For this dish, you want flavorful, delicious, and juicy peaches.
- Red Cherries- ripe, red cherries are best! You could also use Rainier cherries.
- Blackberries- an excellent addition of tartness!
- Burrata Cheese- its soft shell and creamy center perfectly blend contrasting textures to create a landscape of soothing delights.
- Slivered Almonds- for an added crunch!
- Arugula- the base to build and bring it all together!
- Fresh Basil- a pop of freshness in every bite.
- French Baguette or other crusty bread- to make homemade torn croutons that are unforgettable and easy!
- Olive Oil- for the croutons and the dressing.
- Garlic- need I say more?
- Champagne Vinegar- has a sweet yet light and crisp taste. It complements delicately flavored salads and vegetables.
- Lemon- a fresh touch of lemon is always a good idea.
- Honey- for sweetness.
- Salt & Pepper- everything needs a little salt.
Summer Peach Salad with Burrata
Prepare the champagne vinaigrette first to let the flavors marry together.
You’ll also want to begin by peeling and preparing all the fruit so it’s ready for a quick assembly.
Toast the homemade croutons in the oven for the perfect, crunchy bite.
We will toss the salad with the vinaigrette, then let everything sit and marinate to develop and bring on those delicious flavors.
To serve, I love arranging the salad in a big bowl or on a serving plate. Then, I take the burrata cheese and break it over the salad. I top it with fresh herbs, slivered almonds, and a sprinkle of flaky sea salt.

Ingredients
- 2-3 peaches, peeled and sliced
- 1 cup cherries, pitted and halved
- 1 cup blackberries
- 8 ounces Burrata
- 1/4 cup slivered almonds
- 3-4 fresh basil leaves
For the Torn Croutons
- 1/2 French Baguette, torn
- Olive Oil
Champagne Vinaigrette
- 1/2 cup olive oil
- 1/4 cup champagne vinegar
- 2 cloves garlic, grated
- 2 Tablespoons fresh lemon juice
- 2 Tablespoons honey
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Instructions
To Make the Croutons:
- Preheat the oven to 425 degrees. Tear the baguette into bite-sized pieces and place them on a baking sheet. Drizzle with olive oil and toss to coat. Bake until crispy, then use on the salad.
To Make The Champagne Vinaigrette:
- Combine everything in a small bowl or glass bottle with a lid. Stir or shake until ready to serve.
For the Salad:
- Place the arugula down as the base.
- Top with peaches, cherries, blackberries, burrata, almonds, fresh basil, and homemade torn croutons. Enjoy!
Notes
*you can use any crusty bread you like for the torn croutons! Ciabatta, french, sourdough, or anything else will be delicious.
