In the summer months, I love snacking on an easy summer snack board! These boards are quick to make and full of healthy ingredients! I love to include seasonal fresh fruits and veggies, crackers, cheese, nuts, and dips to my charcuterie boards. Make it with me!
Making A Snack Board
Making a summer snack board or a charcuterie board is really easier than it sounds. You can throw anything you want on top of a cutting board or in a cookie sheet and call it a charcuterie!
You can also make them as fancy or simple as you want. This one featured here was relatively simple to make and full of fresh, healthy ingredients.
The trick to making a pretty snack board is to have a variety of ingredients and a theme. The theme today is summer and I wanted fresh fruits and veggies that could be dipping the the cheese.
Laughing Cow Cheese
I am obsessed with laughing cow cheese! I think it is so delicious and I love it for a healthy snack. For this board, I placed two laughing cow cheese wedges in the center of this board for dipping.
I like most of the flavors but my favorites are the traditional and the light. You can find them at most grocery stores near the cheese aisle.

Summer Snack Board
Ingredients
- 2 cups carrot chips
- 1 english cucumber, sliced
- 1 honey crisp apple, sliced
- 12 fire roasted tomato & olive oil triscuits
- 12 almond nut thin crackers
- 2 laughing cow cheese wedges
- 2 cheese sticks, chopped
- 1/2 cup almonds
Instructions
- Place all the ingredients out on a cutting board or a cookie sheet.
- Snack and enjoy!

This is not really a recipe, rather just an idea! You can customize your snack board to have whatever you want! The options are endless!
