Apricots are everywhere right now! I wanted to create an easy recipe that calls for this seasonal ingredient! You can use fresh apricots if you wanted to and mash them up before adding it to the sauce, or just use any jar of apricot jam! The choice is yours!
This recipe for Sweet & Sour Apricot Chicken is a Semi-Homemade Recipe
The beauty of this recipe is that it is semi homemade! We are using fully cooked, frozen popcorn chicken and apricot jam. This helps to save time! You can also use the ready made frozen brown rice from Trader Joes to make this recipe even quicker! I like to make my brown rice in my Instant Pot!
This recipe doesn’t have to be semi homemade! If you want to make everything from scratch, you can! You also don’t have to use breaded chicken if you don’t want to! You can cook up any chicken you want, and top it with the apricot glaze and it will taste amazing.
Is this Sweet & Sour Apricot chicken spicy?
This recipe can be as spicy as you want to make it! The heat is coming from the crushed red pepper flakes! Simply add more if you like it, and skip it if you don’t! I like a little heat, so a 1/2 teaspoon does the trick!

Sweet & Sour Apricot Chicken
This Sweet & Sour Apricot Chicken is the easiest dinner to throw together! It's ready in 30 minutes or less and it is totally delicious!
Ingredients
- 1 package frozen popcorn chicken
- 3/4 cup apricot jam
- 1/4 cup soy sauce
- 1 tablespoon brown sugar
- 1/2 teaspoon crushed red pepper flakes
- 1 green onion stalk, diced
- 1 tablespoon sesame seeds
- Cooked brown rice for serving
Instructions
- Prepare popcorn chicken according to package instructions.
- In a small saucepan over medium low heat, whisk together apricot jam, soy sauce, brown sugar, and red pepper flakes until it bubbles. Remove from heat.
- Toss apricot sauce mixture over cooked chicken. Garnish with green onions and sesame seeds and serve over rice.
- Enjoy!
