I am not kidding when I say that this dessert is one of my all-time favorite bar recipes! These are the best carmelitas! They are super easy to throw together and result in a delicious treat! They are made with an oat crust, caramel filling, melted chocolate, and a crumble top, it is seriously the best! Served best warm with a side of ice cream or chilled, as a stand-alone bar! You cannot go wrong. Make it with me!

What You’ll Need to Make Carmelitas
- salted butter, melted
- brown sugar, packed
- vanilla extract
- old fashioned oats
- all-purpose flour
- baking soda
- salt
- peters caramel, melted
- chocolate chips
Can I Use Premade Caramel Sauce?
Unfortunately, that doesn’t really work, as the caramel sauce is fairly liquid and not made to set up the way the peters caramel is. This is my favorite caramel to use.
You want to use a thicker caramel that will not soak into the oat layer.
You could also use those bagged caramel squares too. Simply add about 1/3 cup of heavy cream when you melt them down to get them to the right pouring consistency.
Can this recipe be doubled?
Yes! I often do double this! It can be baked in a 9×13 pan. You may need a few additional minutes of bake time to get them golden brown.

The Best Carmelitas
Carmelitas combines a thick layer of chocolate with creamy caramel and buttery brown sugar oats to create a delicious bar that nobody can resist.
Ingredients
- 3/4 cup salted butter, melted
- 2/3 cup brown sugar, packed
- 1 tablespoon vanilla extract
- 1 1/4 cups old fashioned oats
- 1 1/4 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 11 oz peters caramel, melted
- 1 cup chocolate chips
Instructions
- Preheat the oven to 350 degrees. Line and grease an 8X8-inch baking pan. Parchment paper is highly recommended as caramel can be sticky.
- Melt the butter in a large microwave-safe bowl. Once this is melted, stir in the brown sugar and vanilla. Then stir in the flour, oats, baking soda, and salt.
- Press about half of the mixture into the prepared baking pan. Bake this for 10 minutes.
- While this is baking, melt the caramel until smooth.
- When the crust is finished baking after ten minutes, remove it from the oven and evenly sprinkle the chocolate chips over it. Be careful the pan will be hot. Then pour the melted caramel over the chocolate layer.
- Cover the caramel with the remaining crust mixture. Use your hand to sprinkle it on and then just tap it down lightly. Again, take care as the pan is hot. Place the baking pan back in the oven and bake for another 15 minutes or until lightly browned.
- Remove the pan to a wire rack and then allow to cool completely before slicing. Or serve it hot with vanilla ice cream.
