A great comfort food dinner is a delicious meatloaf with mashed potatoes and broccoli. Meatloaf is such a flavorful, delicious dish that no a lot of people like. I wasn’t really a huge fan of meatloaf, until I started playing around with flavors and I started using ground turkey. For me, the flavor of the ground turkey makes this recipe a little more savory and a little less ‘meatloafy’ if I do say so myself. There is not a lot to this recipe, and I think that’s why I like it so much! Try it for yourself and see what you think!
This meatloaf is tender and delicious every time I make it! The flavor is all there and it is a perfect dinner! Using the ground turkey rather than beef, gives this recipe a healthy spin. It gives it less fat, and less carbs, making this an all around feel good meal. Pair it with a sweet potato and some veggies and it is the perfect healthy dinner. Box a slice up in a container and save it for the week making for an easy meal prep!
I think the best part about this recipe is that it doesn’t have all the add in’s like onions, carrots, and peppers! This recipe can be deemed quick and easy because it has minimal prep work! All the flavors come from dried seasonings and spices and it is delicious!
Turkey Meatloaf
Yields 2 bread pans
2 pounds ground turkey
1/2 cup ketchup
2 teaspoons Worcestershire sauce
2 tablespoons minced garlic
2 eggs
1/2 cup panko breadcrumbs
2 teaspoons Italian seasoning (blend of thyme, oregano, and basil)
2 tablespoons grated parmesan cheese
1 teaspoon salt & pepper
2 tablespoons ketchup
Preheat oven to 350. In a mixing bowl, combine the ground turkey, ketchup, and Worcestershire sauce. Add in the garlic, eggs, and breadcrumbs and mix until well combined. Finally, add in the Italian seasoning, cheese, and salt and pepper. Mix until well combined. Divide into two well greased, prepped bread loafs. Top each loaf with one tablespoon of ketchup. Bake for 40 minutes or until the internal temperature reaches 165.
