Zucchini Side Dish
This recipe came to me one day because I had a fridge and freezer full of zucchini and corn I needed to use up. I knew I wanted to create a healthy dish that was fast and easy!
When I started playing around with flavor, I realized that this dish is so fast and easy to make, and really it goes well with everything!
Chicken dishes, Steak, Pork, or even Meatballs all pair well with this delicious side dish! Give it a try!
Here’s What You’ll Need
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 4 zucchinis, diced
- 1 cup corn kernels, frozen or canned
- 1 Tablespoon Italian seasoning
- Salt and freshly ground black pepper, to taste
- Juice of 1 lime
- 2 tablespoons grated Parmesan, or more, to taste

Zucchini Side Dish
Here's an easy, healthy vegetable zucchini side dish you can whip up in 10 minutes! Tossed with lime juice, corn, and parmesan.
Ingredients
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 4 zucchinis, diced
- 1 cup corn kernels, frozen or canned
- 1 Tablespoon Italian seasoning
- Salt and freshly ground black pepper, to taste
- Juice of 1 lime
- 2 tablespoons grated Parmesan, or more, to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add garlic to the skillet, and cook, stirring frequently, until fragrant, about 1 minute.
- Add zucchini, corn, and Italian seasoning. Cook until zucchini is tender and cooked through, about 3-4 minutes. Season with salt and pepper and stir in the fresh lime juice.
- Serve immediately, sprinkled with Parmesan.
