My Favorite Homemade Granola

The title of this post speaks for itself! This is my favorite granola recipe. I absolutely love granola. One of my favorite things is a bowl of yogurt, fresh fruit, and a good helping of granola. I often eat granola plan, just snacking on it throughout the day. I like most granolas that I try. Sprouts I recently found out has bulk granola, in all difference flavors. Slowly but surely I have been sampling their flavors, and I have been pretty impressed so far. I love granola baked into a pancake, in an acai bowl, or just over a rice cake with peanut butter. But no matter what granola I try, this recipe is my all time favorite!

This granola is great because you make it yourself, meaning you can control the size on clumping. I love a nice clumpy granola with big, bit size pieces. When you make it yourself, you break it up yourself. I keep mine in larger clumps for that extra bite of flavor! I almost always end up doubling this recipe, because my family and I both like it so much and we want it to last a long time.

My Favorite Granola

3 1/4 cups Oats
1 1/4 cup white/white flour
1 1/3 cup shredded coconut
1/4 cup flax seed
1 cup or more of coarsely chopped almonds
1 cup brown sugar
1 stick butter
1/3 cup water
1/2 teaspoon salt
1 teaspoon vanilla
1/2 teaspoon cinnamon
1/2 teaspoon cardamom

Preheat oven to 300. In a large mixing bowl combine the oats, flour, flax seed, coconut and nuts. Set aside. In a saucepan over medium heat, combine brown sugar, butter, and water and heat until the butter has melted and the mixture is bubbly. Using a wooden spoon, stir the mixture together until smooth, and then stir in the salt, vanilla, and spices. Pour mixture over the oats mixture and stir well to coat, making sure it is well combined. Let stand for 10 minutes.

Spread mixture on a large baking sheet, separating into irregular clumps with your fingers, and allowing space between clumps for the hot air to circulate. Bake until the top is golden brown, about 15 minutes. Remove from the oven to stir and break up clumps, and return to over for another 15 minutes. After 15 minutes, mix well, and allow for another 15 minutes of baking, until the granola is golden brown and dried. Typically takes around 45 minutes. Cool completely on a wire rack. Store in air tight container.

Since some of you are insisting it’s Fall now, I Since some of you are insisting it’s Fall now, I thought I’d share my favorite protein hot chocolate recipe! 

Make any hot chocolate mix but make sure it’s super hot!! Then, whisk together 4 ounces of milk with half a scoop of @cleansimpleeats protein powder until smooth. Protein powder doesn’t like to be hot so whisk it in until it’s blended, then pour it in the hot cocoa as a “creamer” if you will! 

It’ll cool down the drink and add protein!! Would work in coffee too if that’s your jam. Try it!

Prep Time: 35 minutes
Cook Time: 15 minutes
Additional Time: 8 hours
Total Time: 8 hours 50 minutes

INGREDIENTS

3/4 cup butter
3 cups crushed cornflakes
2 teaspoons cinnamon
5 Tablespoons sugar

For the Ice Cream

1 3/4 cup heavy whipping cream
1/4 cup evaporated milk
1/8 teaspoon salt
1 14-ounce can sweetened condensed milk
2 teaspoons vanilla

Just Before Serving

warm caramel sauce
whipping cream
maraschino cherries

METHOD

In a large skillet, melt the butter over medium heat. Add the cornflakes and cinnamon and stir until golden brown, roughly five minutes. Remove from the heat and stir in the sugar. Cool completely.
To a stand mixer, beat the heavy cream, evaporated milk, and salt until stiff peaks form. Gradually pour in the sweetened condensed milk and vanilla until thickened again.
Add half the cornflake mixture to the bottom of a greased or lined 9×9 pan. Pour the ice cream filling over the crust. Sprinkle the remaining cornflakes over the ice cream. Cover and freeze overnight.
Cut the bars into desired servings and top each with warmed caramel sauce, whipping cream, and maraschino cherries.

@brookewalker took a chance on me and brought me in with open arms. Being on her team and working alongside her taught me so much. Life long lessons I will hold and cherish dearly. Brooke is my hero and being able to call her a dear friend means the world to me 🤍

We tallied up more than 100 segments I’ve had the opportunity to share on this stage. 100 times I’ve walk in with an idea and a recipe and brought it to life. I’m so grateful for each and every time I was able to connect and share!! 

I’m in denial that it’s over but I’m smiling that it happened. I’m smiling that Studio 5 has become a home away from home the past 8 years. I’m forever grateful for its impact!!!
