Cookie Butter White Chocolate Cookies are a must-make for a crowd!
This recipe will cook over three dozen cookies if using a one-inch cookie scoop. If you want larger cookies, use a larger cookie scoop and bake for a few additional minutes.
I found that the one-inch scoop makes perfect-sized cookies, you can eat one or two at a time!

What is Cookie Butter?
Biscoff cookie butter is a smooth, delicious butter made from Biscoff speculoos cookies.
The cookies are those crunchy, brown sugar cookies, and they’re super yummy!
You may be familiar with Biscoff cookies from Delta flights.
Now you can buy cookie butter at pretty much any grocery store. You can find it in most grocery stores, right next to the peanut butter and other nut butters.
Cookie butter can be found at Trader Joe’s, but it’s called Speculoos Cookie Butter there.

What You’ll Need to Make Cookie Butter White Chocolate Cookies
- 24 Biscoff cookies divided
- 1 cup butter, cold, cubed
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup Biscoff cookie butter + extra for drizzling, if desired
- 2 3/4 cups flour
- 2 teaspoons cornstarch
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups white chocolate chips

How To Prepare Cookie Butter Cookies
- Preheat the oven to 375 degrees.
- Place 16 Biscoff cookies in a food processor and pulse until they form crumbs. Set aside. Place the remaining 8 Biscoff cookies in a ziplock bag and crush into bite-sized pieces. Set aside.
- To a stand mixer, cream together the butter, brown sugar, and granulated sugar until combined and fluffy, 3-4 minutes.
- Add in the eggs, vanilla, and cookie butter spread. Mix until combined.
- Add in the flour, Biscoff cookie crumbs, cornstarch, baking soda, baking powder, and salt, and mix on a low speed until the dough begins to come together.
- Add the remaining biscoff cookie chunks and white chocolate chips, and finish mixing on low until the dough forms, being careful not to overmix.
- Portion out cookie dough into 1-inch balls onto a prepared baking sheet and bake for 8-9 minutes, until golden brown.
- Remove from the oven to cool. Drizzle melted cookie butter on top, if desired, and serve. Enjoy!
