Butterscotch Rice Krispies & Chocolate Chip Cookies

Hello All!

With the holiday season upon us, there a so many times and events that you need a solid dessert recipe that you can easily share! Something to bring to the family christmas party, to deliver to the neighbors and brighten their day, to make for your work party, and much more! There are so many times during the holidays that it is required to bring something to share! So I thought, why not do a double dessert post, making it easy and quick to find! The two recipes I’m sharing with you today have been tested against the toughest crowds and they are always a success! Here are some recipes you know everyone at your event will LOVE!

The first recipe I have is actually not my own, but I use it faithfully on a regular basis. It is “Laura’s Best Chocolate Chip Cookies” from The Sisters Cafe. Now, I love this recipe because of the unique way it adds oatmeal. I am a texture person, so if you are like me and don’t like oatmeal cookies, this will be a recipe to try! This recipe has you grind up the oatmeal into a fine powder before mixing it into the dough! It makes the cookies thicker and more dense, and that much more delicious! To me, there isn’t anything worse than a limp chocolate chip cookie!  I would definitely recommend trying this version of an oatmeal chocolate chip cookie! You can find the recipe HERE.

The next recipe is my Butterscotch Rice Krispie treats. This recipe actually originated in Cedar City. I attempted to create this recipe I made today but I actually ruined it and it turned into something completely different but still delicious! So recently, I braved it again and figured it out! I am so excited about it because it is so good! I like my chocolate topping a little on the thick side, so you know that it is supposed to be there and not just smeared on. The trick to this recipe is, don’t stop once you have started. I found that if I was looking for ingredients or distracted, then the chocolate would harden and stopped mixing or the rice krispies hardened too much. So my advice would be, have everything out and ready to go.

 

Butterscotch Rice Krispie Treats

6 cups Rice Krispie Cereal
1 cup sugar
1 cup light corn syrup
1 cup creamy peanut butter
1 cup milk chocolate chips
1 cup butterscotch chips
1 tablespoon coconut oil (liquid)

First, get out your 9×13 pan, parchment paper, and all the ingredients. Line the 9×13 with the parchment paper. Next, measure out the rice krispies.

In a saucepan, combine the sugar and corn syrup and bring it to a boil, stirring consistently. Once it hits a full rolling boil, remove it from the heat.

Add the peanut butter to the corn syrup mixture. Now you are ready to add it to the rice krispies. Use a large bowl and add about half.

Mix it together until well coated then add the other half. Transfer the coated krispies into the 9×13. Spray hands with cooking spray and press the mixture evenly into the pan.

Next, to a microwavable bowl, add the chocolate and butterscotch chips with a tablespoon of liquid coconut oil. This helps to keep the chips silky and smooth. I have added a hyperlink in the recipe to the one I use! Microwave on high for 30 second intervals, stirring in between, until melted.

Pour chocolate mix over the rice krispies and spread evenly. Let it cool in the fridge for 25 minutes to allow everything to set. Cut and Enjoy!

Pasta Salad For A Crowd 💡 Head to @samsclub and Pasta Salad For A Crowd 💡 

Head to @samsclub and grab nearly everything you need for a big bowl! 

3 bell peppers
2 English cucumbers
2 cups halved cherry tomatoes 
2 cups halved pepperonis 
1 cup mozzarella pearls or cubes
2 Tablespoons fresh basil 
1/4 cup Olive Garden Dressing 
1 full package, both sides, cheese tortellini 
1/2 cup Pesto 

Slice & dice your vegetables and toss in the Olive Garden salad dressing. Cook your tortellini and toss in pesto sauce and allow it to cool. Mix it all together and store in the fridge until ready to serve!
