What You’ll Need to Make Crispy Ranch Chicken
- 4 chicken breasts
- 2 teaspoons salt
- 1 teaspoon pepper
- 2 eggs
- 2 cups crushed cornflakes
- 1 packet ranch dressing
- 1/2 cup melted butter
How to Make Crispy Ranch Chicken
- Preheat oven to 400 F degrees. Set aside and lightly grease a 9×13″ baking dish or rimmed baking sheet.
- Season each breast with salt and pepper.
- Add cornflakes and ranch seasoning packet to a shallow bowl. Crush the cornflakes into crumbs, leaving a few larger pieces.
- In another shallow bowl, whisk the eggs.
- Dip each chicken in the egg first, then into the ranch-seasoned cornflakes. I pat the cornflake crumbs into the chicken to ensure they’re well coated. Place the breaded chicken into the baking dish.
- Pour the melted butter over the top of each breast.
- Bake for 30-35 minutes, until juices run clear and a meat thermometer reads 165 F degrees. Enjoy!
