With the Holiday season in full swing, everyone is going to have a lot of extra mashed potatoes lying around. Don’t throw those away, put those delicious potatoes to use by making this Easy Shepherd’s Pie! This traditional dish is not made enough. It’s fun, delicious, and super easy! I am a huge mashed potato fan! This is a great recipe because you can use up all your leftovers. This calls for your left over mashed potatoes and gravy! In this recipe, you can either use red wine or gravy, whatever you prefer better. This is one of those recipes that is better the second day as well, so make a lot and stock up for the week! You can also half this recipe if needed and bake it in a smaller pan or a pie tin.

Easy Shepherd’s Pie
Yields: 6-8 servings
2 tablespoons olive oil
1 pound mushrooms, sliced
1 cup red wine or brown gravy
2 tablespoons olive oil
1 cup diced white onion
1 bag frozen peas & carrots
2 cloves garlic
1 pound ground beef
Salt & Pepper
1 tablespoon thyme
2 tablespoons Worcestershire sauce 
2 tablespoons tomato paste
3-4 cups mashed potatoes
1 egg
1/4 cup shredded Real California mozzarella
